I say "by pound" in this example? Why do we use
"the" here? Is it because it is used to specifically
refer the way of using the unit pound?

Hi!
It is not correct to omit THE in your sentence. I do
not really know why, but the convention / idiom is
to say things are sold by the pound and I have
never heard it said any other way.

It's correct to say "sold by weight" or "sold by
volume", but it's "sold by the pound", "by the
kilo", by the ton", etc. I'd say it's because the
unit of weight is countable.
