Kim Koeller has multiple food allergies and celiac disease but refused to stop traveling and eating out. She extensively researched allergy information and joined associations to learn how to safely eat outside the home anywhere in the world. Koeller co-wrote the book "Let's Eat Out Around the World Gluten Free and Allergy Free" to help other allergic travelers. While some restaurant experiences made her sick, with knowledge and preparation she believes allergic people can travel and enjoy foreign cuisine safely.
