Sesame (Sesamum indicum) is an important oil seed crop that originated in India. It is rich in oil (43-55% of seeds) containing unsaturated fatty acids like oleic and linoleic acids. Sesame seeds also contain proteins, minerals like calcium and phosphorus, vitamins, and antioxidants like sesamin, sesamolin, and sesamol which protect sesame oil from rancidity. In Tamil culture, sesame has religious significance and lighting lamps with sesame oil during Diwali is believed to protect against bacteria and viruses.
