The typical Gujarati thali consists of rotli, dal or kadhi, rice, and shaak (a dish made up of several different combinations of vegetables and spices, which may be either spicy or sweet). The thali will also include preparations made from pulses or whole beans (called kathor in Gujarati) such as moong, black eyed beans etc., a snack item (farsaan) like dhokla, pathra, samosa, fafda, etc. and a sweet (mishthaan) like mohanthal, jalebi, doodh pak etc. Gujarati cuisine varies widely in flavour and heat, depending on a family's tastes as well as the region of Gujarat to which they belong. North Gujarat, Kathiawad, Kachchh, Central Gujarat and South Gujarat are the five major regions of Gujarat that contribute their unique touch to Gujarati cuisine. Many Gujarati dishes are distinctively sweet, salty, and spicy simultaneously.

there were only a handful of people who knew about the eclectic
desserts in the Odia cuisine. Being born and brought up in Odisha,
I consider myself lucky to have lived over 20 years of experience
of Odia desserts that are both lesser known and lacking
recognition. Sometimes laden with butter, sometimes containing
clarified sugar and milk solids these desserts are too good to be
missed and are definitely worth a try!
Here's a rundown of the 10 must-try sweets that are popular and
indigenous to the eastern state of Odisha in India. Once known as
the Great Kalinga, the people of Odisha have an age-old
fascination for sweets, making them prepare some of the
country's most delectable and lip-smacking sweets, also known as
"Mitha" in Odia. Here it is:
4. Literally it means roasted cottage cheese in Odia. I know, it
doesn't sound much but believe me once you taste it, it would blow
your mind for sure because of its distinct texture, its smokiness
and most importantly the not-too-sugary taste. Containing sugar
or jaggery, rice flour or semolina clarified butter, milk and dry
fruits to be precise - the flavour of this sweet is enhanced by the
usage of 'sal leaves' traditionally used in Odia kitchen for baking.
It is also considered as the ‘mahaprasad’ to Lord Jagannath - the
supreme deity of Odias and Hindu’s alike.
6. Consisting of deep-fried and flattened brown patties of ‘chhena’
soaked in thickened and sweetened milk or ‘rabri’. The ‘chhena’ is
flattened into palm-sized patties so that they absorb the milk
more readily and is lightly seasoned with crushed cardamoms.
This sweet is especially famous because of its richness in texture
and variety of taste that it offers.
8. Everyone is familiar with this dessert across the world because
of its striking shape and taste that melts into your mouth. But,
fewer people know that Rasagolla originated from Odisha where it
has been served to Lord Jagannath since its inception. Though the
texture and the shape are different from that of the popular
Bengali ‘rasagolla’ across the world and have a more grainy and
earthy taste to it. It was first prepared by Bikalananda Kar at
Salepur, Cuttack was popularly known as 'Bikali Kar Rasagollas'
who also later started an organization known as 'Kar and
Brothers' in 1954.
10. A local favorite, this ‘chhena’-based dessert contains the
ingredients exactly the same as that of the Rasagola but the
method of preparation for the same is different. The kneaded
Chhena is molded into palm-sized rectangular shapes (‘gajaas’),
boiled and deep fried in oil. Once they're fried they are coated
with a sugary syrup before served piping hot. Though at times the
‘gajaas’ are dried that also form crystals of sugar on its surface
making it glisten and appear as snow at the same time.
12. Another state favorite that originates from Nimapada town in
Odisha, it was Aarta Sahoo from Shyam Sundarpur village who is
known to be the true pioneer of this dessert. Though the actual
recipe of this sweet remains a well-kept secret, it is quite popular
and well maintained by the successors of the late Aarta Sahoo.
13. When it comes to the ardent of Odia desserts, it is almost a sin
of not knowing these regional beauties. While these were some of
the vast and rich desserts of the state, there are more than a
few stories behind the origin of these sweets and their
