4. EDIBLE COATING
Defined as intact, thin and transparent edible layer that protects food from
external factors or a seal which restricts the exchange of gases. These coatings
have a great role in food preservation, as they have ability to improve the
nutritional and overall quality of food.

5. COMPOSITION OF EDIBLE COATING
Carbohydrates:
Starch, maltodextrin, carrageenan, alginate, pectin, chitosan and cellulose derivatives
such as methylcellulose and carboxymethyl cellulose.
Proteins:
Casein, wheat protein, whey protein, corn zein, keratin, gelatin , egg albumin and soy
proteins.
Lipids:
Waxes oil, fatty acids and resins.
Some minor components:
Polyols (glycerol), acid base compounds (lactic or acetic acid)

6. CHARACTERISTICS AND BASIC FUNCTION
• Edible, biodegradable, non toxic and environment friendly.
• Serves as barrier to movement of solutes and O2 permeability.
• Can be used as vehicle for carrying functional additives.
• Nutritional value of food product can be increased by adding some nutrients
to edible coating.
• Aroma precursors into coating increased the flavor production.

11. ADVANTAGES OF EDIBLE COATING
• Prevent moisture loss
• Provide gas barrier functions
• Inhibit the exchange of volatile components
• Vehicle for many functional compounds
• Keep the fresh produce safe

13. CONCLUSION
Although packaging was established in 18th century but it has made great
innovations. These innovative packaging solutions will definitely emphasize
more on food safety like delaying oxidation, controlling microbial growth,
sustainability and convenience. However edible films are not intended to
completely replace the conventional packaging, as they are used as an edible
primary packaging in combination with the secondary non-edible packaging to
increase the efficiency of food safety. The main advantage of using edible
packaging is they can be eaten with the food. Another benefit is their
contribution in decreasing the environmental pollution
