select: You’ve become one of the most successful
cookbook authors in Germany with an entire philosophy
based exclusively on vegan recipes. What’s the secret
to your success?
AH: I think it comes down to the fact that I have been
able to combine two things that are becoming more and
more important for people: the will to lead a healthier,
more sustainable lifestyle whilst still being able to
actually enjoy yourself. Vegan food is no longer as
restrictive as it used to be and it is now more commonly
associated with exciting culinary experiences using
high-quality ingredients that are actually good for you.
And that’s exactly where my books come into play.
select: Vegetarian. Vegan. Organic. The subject of
healthy eating is a real hot topic at the moment. Why do
you think so many people are interested in this concept
of yours right now?
AH: I think it’s probably because I offer them practical
solutions. I’ve developed over 350 recipes including
classics such as bolognese and pancakes, so no one
ever has to feel as though they’re missing out on
anything. This makes it so much easier for people
to reconsider their eating habits and what I ultimately
wanted to achieve was to get rid of the negativity
surrounding veganism and show everyone that eating
healthily can actually be fun. Maybe this is what people
like about my approach to cooking.
select: For you, changing your eating habits went hand
in hand with a greater involvement in sport. How
important is it for you to lead a healthy lifestyle?
AH: Oh it’s very important. No doubt about it. There was
a time when I weighed 35 kg more than I do now and I
was desperate to get in shape. Sport has become part
of my everyday life now and I find that taking part in any
kind of physical activity is key to feeling healthy. It
doesn’t even have to take over your life, though, which
is the difference to how things were before in the days
when I used to have to do something just to work off that
extra bit of sauce or chocolate mousse. These days
my diet helps me to stay in shape so I can just do sports
when I’m in the mood.

select: Speaking of sport, you drive a Porsche 911 GT3.
What does this say about you?
AH: I have always been keen to have the genuine article,
whether that’s the best food in the kitchen or the
definitive sports car on the driveway. I don’t make any
compromises in this respect and I’m only ever interested
in the real deal. The Porsche 911 is not just a car, it’s
a philosophy. I never used to like driving but now I have
the GT3, I enjoy it so much that I’ve even taken up
motor racing.
select: You’ve just tried out some of the home accessories
from Porsche Driver’s Selection with us. Are these
the sort of thing you’d enjoy having in your own home?
AH: Absolutely. Generally speaking, I think it’s better to
have fewer things of higher quality. I hate it when things
fall apart a year down the line, for example, not least
because of the environmental damage caused by this
kind of waste. But with the products from Porsche
Driver’s Selection, I get the feeling that these are built
to last and the quality and feel are great. Between us,
I’m really not a fan of kitchen tat like multi-coloured
wooden pepper mills and pink spatulas [ laughs ], so I’d
have far more fun with a Porsche product.
select: We heard that you’re a big fan of matcha tea –
a special kind of green tea which has been finely ground
to dissolve in water. How did you stumble across this
particular favourite?
AH: Your body is like a sports car in the sense that the
better fuel you give it, the better – and longer – it works.
I used to drink a lot of coffee which didn’t do me any
good, but I’ve spent a lot of time looking into nutrition
over the past few years and just came across this finely
ground green tea called matcha, which was popular with
Samurai warriors. It gives you a caffeine hit to keep you
awake, bitters to make sure the caffeine doesn’t hit your
bloodstream too quickly, and plenty of anti-oxidants to
protect your cells. Matcha is what’s known as a superfood.
select: You’re only 34 and you’ve already achieved so
much. In one sentence, how would you summarise your
plans for the future?
AH: I want to make the world a healthier place without
compromising on the fun factor.

COURGETTI BOLOGNESE WITH ALMOND PARMESAN
Serves 2: 280 g firm natural tofu, 2 onions, 2 cloves of garlic, 6 sundried tomatoes in oil,
½ bunch basil, approx. 9 tbsps olive oil, 2–3 tsps dried oregano, iodised sea salt, freshly ground
black pepper, 200 g tomato puree, 2 tsp agave syrup, 80 ml red wine, approx. 1 kg courgette,
60 g toasted almonds.

Preparation [ approx. 15 minutes ]: Crumble the tofu into a bowl. Peel the onions and garlic.
Drain the sundried tomatoes. Wash the basil and spin dry. Finely chop everything. Heat 6 tbsps
olive oil in a pan and fry the tofu for 4 minutes, stirring occasionally. Add the onion, garlic and
oregano to the pan and fry for a further 4 minutes. Season to taste. Add the tomato puree,
sundried tomatoes and agave syrup and allow to caramelise for 1 minute. Deglaze with red wine
and leave to cook for 1 minute. Fold in the basil, salt and pepper. Wash the courgettes and cut
into spaghetti-style strips with a spiraliser. Mix in 2 tbsps olive oil and a pinch of sea salt, add to
the sauce and heat everything for 1 minute. Coarsely grind the toasted almonds with 2 pinches
of sea salt in a mixer until they resemble parmesan. Serve the pasta and top with the almond
parmesan and a drizzle of olive oil.
