Amukaru. sweetpotatoes baked
1. Name of Dish. AMUKURU (potatoes buried in hot red soil, and baked)
Introduction,
Sweet potatoes, is a stable food in the eastern region of Uganda in the native town of soroti,
and the entire sub region of teso.it is cooked in a variety of ways, other than boiled, dry and mashed,
there is a simple method, were it is cooked in a pit dug and heated at a temperature hot enough to
bake this fresh from the garden potatoes, known local as Amakalu “Which are roasted potatoes in
hot soil.”
Ingredients.
1. Sweet potatoes (fresh mature sweet potatoes)
2. Soil blocks or clumps of soil (not loose)
3. Firewood.
Procedure/ direction.
Dugout a shallow and wide hole, enough for the potatoes you intend to bake.
Arrange the soil blocks on either side of the hole, overlapping, each other in form of a cave like.
The overlap should allow space for smoke to escape
Place the fire wood in the hole, arranging it in such a way that you can light and lights easily.
Heat the soil until the inside is hot enough, and has turned red, before placing in potatoes.
Before remove the fire wood, the hot charcoal, generated carefully, to avoid the soil block to
collapse in side.
Put the potatoes one at a time, until all that is to be put is over.
Heat the soil block, and make sure, the ground is leveled once again, put over the hot charcoal
which were removed.
Allow to bake at least for 4-6 hours. Until ready, the cooked potatoes will have a nice aroma,
before you peel them. (Cooking can be down in the morning hour and afternoons the potatoes can
be Un earthed).
Serving
This potatoes can be served and eat as a snack with a drink juice or Tea, or simply alone as one
may require.
