1 medium-sized head of cauliflower
2 tablespoons coconut oil

2 tablespoons soy sauce or tamari (gluten-free soy sauce)
1/2 teaspoon sesame oil
Salt and pepper to taste

Instructions:
Remove the leaves and stem from the cauliflower head, then chop the cauliflower into small
florets. Using a food processor, pulse the cauliflower until it resembles rice grains. If you don't
have a food processor, you can grate the cauliflower using a cheese grater.
2. Heat the coconut oil in a large skillet or wok over medium heat. Add the onions, bell peppers,
and carrots to the skillet and sauté for 3-4 minutes until slightly softened.
Add the minced garlic to the skillet and sauté for an additional minute.
Push the vegetables to one side of the skillet and add the beaten eggs to the other side.
Scramble the eggs until fully cooked.
Combine the scrambled eggs with the sautéed vegetables in the skillet.
Add the cauliflower rice to the skillet and stir everything together. Cook for about 5-6 minutes
until the cauliflower rice is tender but not mushy.
Drizzle soy sauce or tamari and sesame oil over the cauliflower fried rice. Season with salt and
pepper to taste. Stir well to evenly distribute the flavors.
Cook for an additional 1-2 minutes to allow the flavors to blend together.
Remove from heat and garnish with chopped green onions and sesame seeds if desired.
Serve hot as a main dish or as a side with grilled chicken, shrimp, or tofu.
