2. How Poisonous is Food Poisoning - Common Causes
Food poisoning is commonly caused by the following
bacteria:
Campylobacter (causing 2-10 days of fever, cramps,
vomiting and diarrhea that may be bloody)
Salmonella (causing 2-3 days of profuse, watery
diarrhea)
Shigella (causing 2-7 days of diarrhea with blood or
mucous)
E. coli (causing sudden, severe, bloody diarrhea)
Listeria (causing stiff neck, confusion, weakness,
fever sometimes preceded by diarrhea)
Cl. botulinum (causing botulism, a rare but
potentially fatal paralytic intoxication)
3. Preventing Food Poisoning
1. The basis of prevention is stopping the bacteria from
contaminating food and utensils.
2. Wash your hands before preparing food.
3. Wash all utensils used in cooking properly.
4. Wash raw vegetables well before using them.
5. Do not let cooked food sit out for more than two
hours. Dairy products especially tend to rancidity
quickly in hot humid conditions.
6. Make sure all dairy products are pasteurized.
7. Do not purchase canned food items that are bulging or
have dents in them as this indicates a possible breach
in storage safety.
8. Store frozen foods and meat in the coldest part of the
refrigerator.
9. Take care to heat frozen foods properly. The center
must be fully cooked.
10. Ensure that the water you use in preparing food is safe
and treated.
11. When travelling, have only hot, freshly prepared meals
and do not drink water from untreated sources.
