and two tablespoons low-fat sour cream.

5. Over each of the cube steak, sprinkle half
teaspoon pepper and salt and set it aside. Over
medium heat, heat tablespoon oil in a large
nonstick flat pan and add the steaks. Cook
each steak for a couple minutes on each side,
turning once, until brown. Cook the steaks in
batches if they look cramped up for space in
the skillet. Transfer the steaks onto a plate and
cover it to keep the meat warm and tender.

6. • To the same pan, add the remaining tablespoon oil. Add mushrooms, diced
shallot and the remaining teaspoon of pepper. Cook for 4 to 5 minutes,
while stirring occasionally, until the mushrooms turn to a golden brown
color and have released their fluids. Sprinkle flour and continuously stir for
a minute until there are no lumps seen. Add the dried or fresh thyme,
sherry and the meat broth. Bring the mixture to a boil and cook for 3
minutes, while continuously stirring, until the mixture is thick enough to
coat the back of a teaspoon. Remove from the heat and add the sour
cream, stir until mixed.
• Return the steaks, with any accumulated juice, to the pan and turn such
that the sauce coats each steak. Serve hot.
