   Mushrooms: first concrete step
Blue Economy
   Concept developed by Prof. Gunter Pauli
   A Blue Economy business model will shift society
    from scarcity to abundance "with what we have“
   Tackling issues that cause environmental and related
    problems in new ways
   Refocus the use of rare and high-energy cost
    resources to instead seek solutions based upon
    simpler and cleaner technologies

Project
Goal and mission:
   Our goal is to produce and sell mushrooms that
    are eco-conscious and organic. They are
    produced from waste and do not require much
    resources to grow.

   We want them to be the symbol of a new way of
    doing business, a first step in the
    implementation of the Blue Economy in our daily
    lives.

Regulation (1/3)
   Establishments:
       Cleanable
       Free from insects
       Need for personal hygiene facilities
       Temperature/air cleaning facilities (storage)
       Free from pest and animals
Regulation (2/3)
   Process:
       Need to monitor quality and review processes regularly
       Identify risks and critical zones + control
       Check quality of waste and seeds
       Keep documents about production
       Put lot numbers on production to ensure an easy recall
        if necessary
       Store and get rid of waste in a hygienic way (not in the
        same building as food)
Regulation (3/3)
   Employee:
       Train employees about hygiene
       Ask for a doctor certificate before hiring
   Packaging:
       Wholes to enable passage of air
       Scientific name on packaging
       Minimum fill: The container shall be well filled with
        mushrooms and the product (including packing
        medium) shall occupy not less than 90% of the water
        capacity of the container. The water capacity of the
        container is the volume of distilled water at 20oC which
        the sealed container will hold when completely filled.
       Needs to display info on how to store/prepare
        mushrooms
Risks
   Problem with acquiring raw material
   Raw material is spoiled
   Problem with acquiring seeds/bags
   Problem with seeds
   Problem with production (not growing)
   Problem with end product (mushroom is not good)
   Demand is not sufficient for supply
   Demand is too high for supply
   Complaints about taste
   Costs get too high
   Price is too high
   Increasing competition
   Existing competition
   Problem with packaging
   Price for bags/packaging gets too high
What we still need to do
   Develop the business plan further

   Get more info about process

   Create a logo + slogan

   Contact with potential customers and suppliers
       Personal contact + flyer

   Launch
     Offer discounts or free samples
     Put coupons + advertise in local magazines (e.g.
      Gemeente Landen)
How can you help?
   How much should we produce at the beginning?

   How much space do we need?

   How can we link the different parties in the food
    chain (brewery – mushrooms – fish – etc)?

   Where do we get waste from? What type?

   Can we get detailed information about the process?
