Assignment Task/ Outline The general learning objective for this project is for students to apply what they have learned in the course to real organizational situations and reflect upon their learning. Students should demonstrate the application of theory and knowledge in their report. KFC company and to conduct relevant and adequate primary and secondary research on the chosen organization and apply what they have learned within their course onto the chosen organization. The student should therefore be able to visit the selected organization. Research of the organization should be conducted with particular reference to the following 4 core modules: 1 . Central Kitchen and Catering Operations Central Kitchen Operations Catering operations Different segments of the food production process Storage conditions per regulatory requirements 2. Food Preservation Value of food preservation Various methods of food preservations used Perishability of food Ingredients and substance used in food preservation 3. Food Safety Management Safety practices and protocols in accordance with the legislation of the food production establishment Food safety and quality management systems Risk assessments and identifying any threats to food safety Problem solving skills from a safety standpoint 4. Food Packaging Technology Different types of food packaging Food innovations Food packaging Food packaging materials Students are required to prepare a 2500-word report discussing how the theory and content covered in the 4 core modules above are implemented within their chosen organization. Students are to include a brief introduction to the organization they have selected including brand, size, customers, services, products and future plans (if any). The references should be stated at the end of the students essay (APA referencing preferred), using a minimum of 10 references from books, journals or articles from the internet to support their views.
