color palette, look, and branding language to the Symphony across three seasons. Designs

overhaul of the web design and navigation for the ASO website. Responsible for day-to-

Preparing Chester’s®
Frozen, Pre-Baked Biscuits
NOTE: Chester’s®
Frozen, Pre-Baked Biscuits should be
slacked in the cooler overnight or for 12 hours minimum.
Refrigerated Shelf Life: 7 days
Step 1
Follow proper hand washing procedures and use
food-safe gloves.
Step 2
Preheat the convection oven to 325°F (165°C). Spray
9”x12” sheet pans lightly with pan release spray.
Step 3
Place biscuits on the sheet pan, tucking biscuits
as close together as possible for best results.
Step 4
Bake biscuits in the convection oven for approximately
10 minutes. Note: Cook time may vary. Make sure that
biscuits reach the appropriate internal temperature.
Step 5
Temp the biscuits. All biscuits should reach an internal
temperature of 165°F (74°C). If they have not reached
this temperature, place back in the oven for 1 minute
increments until they reach 165°F.
Step 6
Once the biscuits have reached the proper temperature,
use a wide pastry brush to brush biscuits liberally with
liquid margarine.
Step 7
Place heated biscuits in amber pans with lids
in the heated merchandiser.
Hold Time: 1 hour at 140°F (60°C).

5. My greatest accomplishment at Chester’s however
was completely accidental. A deal with a client
required a series of 6 training videos; I was assigned
to handle the project with an amateur videographer
to help. I developed the scripts from Chester’s
documents, did the voice overs, planned the shoot,
acted out the various activities and did the design/
editing of the footage.
The response was so positive, we ended up rolling
out (at last count) 165 different videos, including all
Chester’s processes for multiple client relationships,
plus versions for sister companies Wynn’s Grain and
Spice and BirdShack Fried Chicken — both in English
and in Spanish.

6. Wynn’s is a sister company to Chester’s, created to
appeal to B2B customers who want Chester’s quality
products without the branding. It targets supermarket
chains, restaurants and large food service companies.

7. In the latter half of 2015, I became part of the
BirdShack development team. BirdShack is a
“Chester’s lite” concept — for convenience stores
who need some assistance with their chicken
program, but don’t want to (or don’t need to) go
with the full Chester’s branded program. Its aesthetic
is markedly different from the two other brands and
is a lot of fun to work on.

The ASO faced a challenge in attracting a younger
demographic to Symphony performances. One way I
handled that was in shifting the brand identity of The
Classical EDGE series more towards the “rock poster” end
of the scale.
13. Working with the ASO meant branding a host of auxiliary programs. Here are some of the
logos I designed that fit under the ASO umbrella.
14. The motto of mental_floss magazine, “Feel smart
again,” was the foundation of all the work we did not
only for the bi-monthly issues, but also a wide range of
merchandise. Everything stayed true to the brand goal
of “brainy — but fun brainy.”

15. UNDERGROUNDEDUCATION
EVERYONE KNOWS THAT SWASHBUCKLING TYPES
aren’t exactly known for obeying the rules. But
years before the United States gained its inde-
pendence, democracy was actually thriving aboard
pirate ships. Perhaps that’s because they reasoned
that a little law and order was better than the alter-
native. Crammed aboard a ship with 300 unruly
sailors, pirates were quick to adopt a government
rather than let anarchy ensue.
Of course, why they chose democracy as their
form of government is another matter. As it turns out,
buccaneers were leery of absolute authority. Many
were escaped slaves or indentured servants who’d
