The modified keto cookbook
Baked Salmon with Asparagus:
● Ingredients:
​ 4 salmon filets
​ 1 bunch of asparagus, trimmed
​ 2 tablespoons olive oil
​ Salt and pepper to taste
​ Lemon wedges (optional)
● Instructions:
​ Preheat the oven to 400°F (200°C).
​ Place the salmon fillets and asparagus on a baking sheet.
​ Drizzle them with olive oil and season with salt and pepper.
​ Bake for about 12-15 minutes or until the salmon is cooked through and
the asparagus is tender.
​ Serve with lemon wedges if desired.
Cauliflower Fried Rice:
● Ingredients:
● 1 medium cauliflower head, grated or processed into rice-like texture
● 2 tablespoons coconut oil
● 1 small onion, diced
● 2 cloves garlic, minced
● 1 cup mixed vegetables (such as peas, carrots, and bell peppers)
● 2 tablespoons soy sauce (or tamari for gluten-free option)
● 2 eggs, beaten
● Salt and pepper to taste
Instructions:
​ Heat coconut oil in a large skillet over medium heat.
​ Add onions and garlic, and sauté until fragrant.
​ Add mixed vegetables and cook until they start to soften.
​ Push the vegetables to one side of the skillet and pour the beaten eggs on the
other side.
​ Scramble the eggs and then mix them with the vegetables.
​ Add the cauliflower rice and soy sauce to the skillet. Cook for 5-7 minutes, until
the cauliflower is tender.
​ Season with salt and pepper.
​ Serve hot.
​
Avocado and Bacon Stuffed Chicken Breast:
● Ingredients:
​ 4 boneless, skinless chicken breasts
​ 2 avocados, pitted and mashed
​ 4 slices bacon, cooked and crumbled
​ 1/2 cup shredded cheddar cheese
​ Salt and pepper to taste
● Instructions:
​ Preheat the oven to 375°F (190°C).
​ Cut a pocket in each chicken breast without cutting all the way through.
​ In a bowl, mix the mashed avocado, crumbled bacon, and shredded
cheese. Season with salt and pepper.
​
​
​ Stuff each chicken breast with the avocado mixture.
​ Place the stuffed chicken breasts on a baking sheet and bake for about
25-30 minutes or until the chicken is cooked through.
​ Serve hot.
