➝ More stable in an acid than alkaline medium.
➝ Susceptible to light, high temperature, oxygen,

➝ Is a white to yellow-tinged crystalline powder.
➝ Occurs in two forms.
➝ They are L- ascorbic acid (reduced form) &
dehydro-L-ascorbic acid (oxidized form).
➝ Both reduced and oxidized forms are biologically
active.
➝ However, D- ascorbic acid is inactive.

Szent- Gyorgyi (1893 –
1986) an eminent
hungarian biochemist.
Later, in 1937 he received
Nobel prize in medicine
for discovery of Vitamin
C.

• Chemical formula- C6 H8 O6
• Molecular mass -176.14 g/ mol
• Contains 4 hydroxyl groups in
positions 2, 3,5 and 6.
• -OH group in position 2 has pKa,2
=11.6.
• -OH group in position 3 is acidic
(pKa =4.17).
• -OH group 5 & 6- acts as a
secondary and primary alcoholic
residues respectively.
