14. Shoot processing - Fermentation
• After slicing fresh bamboo shoots, it is mixed with salt and allowing
them to ferment naturally for several weeks to several months,
depending on the desired flavor and texture
• Host of microbes mainly lactic acid bacteria are involved in bamboo
shoot fermentation.
• Fermentation are said to enhance flavor, taste and aroma but also
detoxify anti-nutrients and remove cyanogenic glycosides present in
bamboo shoots.
15. Harvesting Time and Preparation of Fresh
Bamboo shoots
• Harvesting time depend upon the varieties, in Nepal it is harvested
at the end of March to May.
• The peak availability period is June to October.
• Usually harvested between 7-14 days after emergence, depending on
species when attain a height of ~15-18 cm
• Harvest Bamboo shoots by cutting them off even with the soil, or
digging around the young shoot and cutting just above the rhizome.

• Harvested bamboo shoots are collected, defoliated and boiled
in water with turmeric powder for 10 -15 minutes to remove
the bitter taste of the bamboo after which the tama is ready
for consumption.
• Tama is commonly sold in local markets during the months
of June to October when young bamboo shoots sprout.
