After a long association with Hilary Dunnett formally of Wechsler - S ACut Glass Group, Maryann Joined the Hospitality Division in

Some of these projects included the opening of two Hotels in Ghana, as well as the refurbishing and building of totally ‘new’ Buffet
areasatbothLabadiBeachHotel(LegacyHotels)andLaPalm,RoyalBeachHotel,alsosituatedinGhana.

2. When Maryann decided to leave the Corporate World and return to running her own Consultancy Business, one of the
partnersthatshedecidedtoworkwithwasDinaMareeofPasticheInteriors.
HavingworkedwithDinapreviously,whileatWechsler,MaryannandDinaprovedtobeagreatfit,andalthoughtheydon’t
do many projects together any more they remain close work friends and would recommend each other for any and every
projectthatcamealong.
Oneoftheir‘JointVentures’wasworkingonanumberofjobsforasmallGroupofCompanies
thathaveholdingSubsidiariesinZambia.ExportingEquipment,Crockery,CutleryandGlassware
onanon-goingsupply.
Maryann has worked with Robert Taylor from RT Kitchens over the past 15
years.
During this time they have formed a close working relationship and tackle
each project with enthusiasm and confidence. Working like a well oiled
machine. Maryann does the Designs and all Shop Fitting Detail Drawing
andSpecificationsandRobertwithhisteamthenbringthedesignstolife.
Robert has worked with Maryann on both Legacy’s Labadi Beach as well as the Buffet at La
PalminGhana.
One of the most innovative designs and implementation was the ‘Self Cooling, Self-Contained
RefrigeratedIceWells’.
Robert also worked with Maryann and Wechsler on the
Shop Fitting of all the fixed and Mobile Counters for FNB
Learning and Training Centre in Sandton. One of the
many ‘Specialist’ units was for the Beverage Counter,
which housed ‘pull-out’ Shop Fitted Face Fronts, that
carriedaselectionofStandardGlassandCupRacks
within. This allowed for replacement Racks to be brought from the kitchen Wash-up area carrying
cleancupsandglasses,withouttoomuchdisruptiontotheStaffDiners.
This Ice-Well design and concept was first used by Maryann more than 25 years ago when she made a double sided
Refrigerated Ice-Well which sucked the surrounding air through side vents on the body of the Stainless steel Well. The air was
thendrawndowntoacoolingCondenser,housedundertheunit.Thenow‘Cold’airisthenpushedup
throughaTower,whichrunstheentirelengthoftheIce-WellandispushedoutofVentshousedin
thisTower,tothenblowovertheproductwhichistobekept‘Cool’.
ThesuccessofthisDesign,madeitanidealadditiontotheDesignandimplementationoftheBuffet
atLabadiBeachHotelinGhana.
RobertwasgiventheStainlessSteelFabricatedIce-WellstoShopFitinthematchingwoodfinishesas
heusedontheremainedoftheServery/BuffetCounters.

3. When Maryann first decided to branch out on her own, she formed a Company called TDC (Total Design Concepts).
AlargepartofherworkcamefromtheAngloAmericanGroup,basedinJohannesburg.
After being recommended by one of the Sales Representatives at Vulcan President, Maryann was interviewed by
the then Manager of Corporate Services, Nick Preston, and awarded the contract to Design the up-graded Kitchen,
Staff Food Court, three Dining areas and the Coffee Bar. Her work on these projects proved to be so successful that
the Client then asked Maryann if she would be prepared to work on the upgrading of all the Offices, which she readily
acceptedashernextchallenge.

many of these Catering Companies as
well as the renowned equipment
Suppliers.
Maryann believes that there is no such
thing as a ‘small’ job. All projects large
and small all get the attention it
deserves and the expertise necessary
tomakeitasuccess.
Maryann ended up working for Anglo America for over 5 years. During this time she also did their ‘Corporate Box’ at Ellis
Park as well as some of their ‘Guest Flats’ in Brynston, a ‘Game Lodges’ and the Office blocks at 44 Main Street, 45 Main
Street,47MainStreet,55MarshallStreetandTheClinic.
During these years, Maryann worked with Vulcan President (Ponti Prison, The Dome CPK),
Electrolux (Monticasino & Zimbali Lodge), KDH Design, Fedics, Sodexho & Royal Food Services,
justtonameafew.

4. The first 100% COOK-
CHILL Operation in
Southern Africa.
The brief for this Kitchen,
was to be able to feed
5000 diners all within 7
minutes.
Design Consultant - Started the Design Department for this Contract Catering Company. This
also saw the ‘start’ of the Computerized Drafting Layouts. Meeting Clients, both ‘new’ and
existing.
Designing Layouts, Service Drawings, Equipment Specifications. Negotiating the best prices
from Manufacturers and Suppliers and thereafter Implementing the installation of the ‘new’
Kitchens, Serverys or Boardroom. Assisting with Decor and Designs as well as advising on
Crockery,Cutlery,Glassware,TableTopandKitchenandServery‘Smalls’.
Maryann worked on this project for more than three years. From
traveling to the UK and Europe to study the ‘Cook-Chill’ process of
CookingandRe-generationoffood.WorkedwithBobKingsburyfrom
‘Foster Refrigeration’ in the UK, drawing up and compiling the ‘Brief’,
which would become the ‘standards’ on which the Kitchen and it’s
Designwouldbebased.
Not only did Maryann Design, and Specify the Main Central Production
Kitchen and the seven Satellite Regeneration Kitchens, but she drew up
the Specifications which would go out for Tender for not only the
Equipment, but for the Crockery, Cutlery, Glassware, Table Top and
Kitchen‘smalls’.
This incredibly learning curve would later stand her in good stead, when she
was hired to design the NDAH (New Durban Academic Hospital) in Cato
Manor, Durban. This was to be the second 100% Cook-Chill Production
Kitchen in Southern Africa. Once again drawing up all the Specifications,
overseeingtheTenderprocessandadjudicatingtheTenders.
The NDAH was to become one of the largest Teaching Hospitals in Southern
January 1990 - February 1997

After starting the Design Department for Supervision Food Services, Maryann remained in Durban for five years, travailing all over Southern

Maryann was invited by many of South Africa’s Leading Catering Companies to travel overseas to their Factories and Suppliers to see first hand,
whatthelatestandmostuptodateEquipmentwasavailabletotheAfricanMarket.

Responsibilities included travailing throughout South Africa, Consulting and Designing for Sun
International, Southern Suns, Holiday Inns, Contract Caterers, Major Restaurant Groups,
Institutions, Schools and Hospitals.

Overseeing the dismantling of existing Kitchens and then

MaryannstartedworkingatHotel&BarRequisites,whichwastheNatalbranchofPresidentTrading.
Her responsibilities included meeting with Clients, working with these Clients, Architects, Interior Designers such as Lionel Levine Interiors, and
Hotel Management and Executive Chefs, such as Billy Galligher, John Zimmermann and any Food & Beverage representative. Measuring up,
Designingstandardaswellas‘specializedEquipment.
It was, while working at Hotel & Bar that Maryann designed and oversaw the innovative design of a ‘Circulating Air Cooling Ice-Well’. Spending
hoursattheFactory,discussingandimprovingonthedesign,untilsuchtimeastheyhadthe‘perfect’product.
This motorized Ice-Well was designed in such a way that it drew in air from the surround, carried the ‘air’ to the condenser, where the air was
cooled,beforepumpingitbackthroughtheventsonthesidesandthecentraltower,andoverthedisplayedproductofsaladsordesserts.
TheIce-WellwasthencladbyaShopFitterofchoice,tomakeit‘fit’theRestaurant ,tolooklikeaWoodenWagon.
The overwhelming success of this unit would lead to many variations being designed and installed in many destinations. The latest being
includedinthedesignoftheBuffetatLabadiBeachHotel,inAccra,Ghana.
Décor
Another innovative design and Manufacture was of the three Mobile Buffet
Trolleys built for the Beverley Hills Hotel in Unhlanga, North Coast in Kwa Zulu
Natal.
Thefirstunitwasa‘MeatTrolley’andwasheatedbymeansofasmallGasbottle,
housed in the base of the Trolley. A Drop-in Roll Top Carver Chafer was the
centralfeature,withsmallerPotsdroppedintotheBrassTopforSauces,Gravy’s
andButters.
The second Trolley was a ‘Fish Trolley’ and comprised a series of long ‘Fish
Kettles’ and ‘Fish Steamers’. Once again this Trolley was heated via the Gas
bottlehousedinthecabinetbase.
The third Trolley had a Neutral Cabinet Base as it was solely for ‘Starters’. The
top of the Trolley comprised two long Ice-Wells, Stepped up one from the other.
EachIcewellhavinga8mm‘safetyglass’hingedLid.Aseriesofporcelaindishes
lined up within each Ice-Well with the product ‘on display’. Removable Stainless
steel Ice-Pack Trays lay in the base of each Ice-Well, keeping the product ‘cold’
throughoutDinnedService.
AllPotsandChaferwereinBrassandCopperexternalfinishes.
The external finish of the Stainless Steel inner Trolley was
Shop Fitted in ‘Washed Wood’ cladding to match the Hotel’s
Décor, which added to the ambiance and status of this
prestigious5starHotel.

ORIENTAL OVERSEAS LINES:
Maryann started working on board the SS Oceanic Independence Passengers Liner as an Assistant to
the Cruise Director. This Passenger ship was based in Taiwan, but cruised the Indian Ocean Islands,
SouthAmericaandtheFarEast.
Her duties included liaising with Passengers, go-between between the Taiwanese Staff and the
PassengersandorganizingalltheEntertainmentonBoardtheShipandoverseeingtheToursonLand.
The employment came to an end when war broke out in Angola and the South African Government
recruitedtheShiptotransportRefugeesfromAngolatosurroundingCountries.
In 1976 Maryann started working for the Shop Fitting Division
of PG Glass. Based in Durban, Natal she was Employed to do
the Drafting of Layouts as well as working on the Decor and
ImplementationofInstallations.

Maryann has been writing stories as
long as she can remember. As a child
she was forever writing down her
thoughts and making up fictional
characterstospinstoriesaround.
Doing a Journalism Course via
Correspondence.
In the late 1980’s she became the Local
Correspondent for the Southern Cross,
inSouthernAfrica.Writing‘local
interest’ stories about the everyday people in and around Natal,
whichwereroundedoffwithphotographs.
Shepublishedherfirstnovel“SticksandStones”in2012andhas
a number of other books which she hopes to publish in the near
future.
Maryannhasbeeninvolvedinthe
Theatreforthepast35years.
TheDurbanCatholicPlayersGuildwerecommitted
to preforming the Passion Play every 5 years,
modeled on the original play written and produced
inObermmergau,Germany.
After acting in the Durban Passion Play for the 1978 and 1982 productions,
Maryann set about the re-design of the Sets for the next Passion Play which
wastotakeplacein1987.
Designing and then assisting with the making of the huge interchangeable
sets, Maryann was able to see first hand, how successful her designs were,
when she again took to the stage to participate in this renowned re-
enactmentofthelifeanddeathofChrist.
Maryann also belonged to the St James Arts Group, where she participated
in a number of productions as well as designing and making of Sets and
DirectingofProductions.
