5. So many like Lisa need you this holiday
season. Your support helps those in need
. . . and transforms lives!
Lisa was down to 70 pounds, half of her
normal weight. “I looked like death
walking,” she says. “I wanted to die. I had
given up hope.”
That’s what 17 years of meth addiction will
do — combined with the PTSD of an
abusive childhood, during which she was
raped twice. “Meth numbed my feelings,”
she says.
Still, as an adult, Lisa maintained regular
employment and raised five children. “I
thought I was a functioning addict,” she
says, “but I’ve since learned there’s no such
thing. I had to hit rock bottom to quit the
drugs and make some changes.”
Rock bottom meant having her kids taken
away by child services and facing the
possibility of a jail term. Instead, Lisa came
to the Mission for help and to start over.
“It’s good,” she says. “It feels like family. I’ve
quit using drugs, I’m getting close to God,
and I’m getting my kids back!”
This is a true story from one of our sister missions. The
photo has been changed for the privacy of the client.
6. CRUST
• 1½ cups graham cracker crumbs
• 1/4 cup melted butter
FILLING
• 4 pkgs (8 oz ea.) cream cheese,
softened
• 11/2 cups granulated sugar
• 4 eggs
• 1 cup (8 oz) canned pumpkin
(not pumpkin pie mix)
• 2 teaspoons pumpkin pie spice
GARNISH
• Whipped cream
• Pumpkin pie spice
• Heat oven to 300°F. Line a 13x9 baking pan with
parchment paper, leaving about 1 inch of paper
hanging on the sides.
• In a medium-size bowl, combine the graham
cracker crumbs with the melted butter. With
your fingers, press the crust on the bottom of
the prepared pan. Set aside.
• In the mixing bowl of your stand-up mixer, add
the cream cheese and sugar. With the paddle
attachment on, beat on low speed until light
and fluffy. Beat in eggs, one at a time, just until
blended. Spoon half of the mixture over the
crust and spread evenly.

7. Our kitchen is abuzz with holiday activity. The planning.
The prepping. The banging of pots and pans. And the
wonderful aromas that fill the air. With your help, we
are bringing the smells, tastes, sights and sounds of the
season to those in our care — and including them in the
celebration!

• To the remaining cream cheese mixture, add the pumpkin puree and
pumpkin pie spice. With a wire whisk, stir until smooth. Carefully, spoon
over mixture in pan.
• Bake the cheesecake in the preheated oven for 50 minutes or until just set.
Turn off the oven and leave the door ajar allowing the cheesecake to slowly
cool down for about 1 hour or so.
• Refrigerate for at least 3 hours before cutting into bars. Top each bar with
whipped cream and a dust of pumpkin pie spice. Enjoy!
