Today, people from all around the globe use
herbs. Around 35% of the population of the
world uses herbal medicine in one way or
another.
Due to Cyprus’ location, geology and climate an
abundance of different types of herbs are
cultivated on the island. Herbs can be used as
a food additive for flavor, color or as a
preservative that kill harmful bacteria or
prevent their growth. They can be used for
medicinal purposes, for flavoring or garnishing
food and for the making of fragrances.
In Cyprus, there are more than 600 different
types of herbs and people from the
Mediterranean island make great use of them
whether that’s by drinking a hot cup of herbal
tea at night or by using them to spice up their
food.

7. Cyprus Herbs in your Kitchen
Stifado : Beef
prepared with onions
and marinated in red
wine. Beef is usually
cooked alongside with
cinnamon sticks and
cloves.
Souvla : Large chunks of
meat (neck and shoulder of
either pork, lamb, or
chicken) slow-cooked on a
large skewer over a
charcoal barbeque,
called foukou in Greek
seasoned with lots of
oregano.
Sheftalies :
Sheftalies are made with
minced lamb or pork and
mixed with lots of
cinnamon, parsley and
onion and other spices.
They are wrapped in thin
caul fat, usually from a
lamb. They are either
cooked in the oven or
charcoal-grilled.
Potatoes with coriander
and red wine : fried baby
potatoes that are then
tossed in the saucepan until
they are coated with the
crushed coriander seeds and
red wine is added.

to sell our products to our fellow students.
We firstly offered the students tea and
homemade bread that we had prepared
using our herbs and subsequently they
purchased the products.
