Work Experience
Pappas INC/Pappasitos #12 05/1993-08/1999
Daily duties included either opening or closing the restaurant. I trained and mentored staff, from every position that
worked front of the house (ie. Hostess, Wait Staff, Trainers, Head Wait, Bar and other Managers in training). I
interviewed candidates for new employees. I worked closely with the Kitchen Manager, and Kitchen staff to ensure the
the flowof orders were coming out on time. I was able to talk to guest and staff in a professional manner if problems
arose or simply greeting. Managed, scheduled, and prepared for daily staff meetings for either am/pm shifts. Hosted and
planned events for charity and staff team-building exercises, and planned “General Yearly Staff”meetings with other
managers. We regularly staffed 80+ employees. My responsibilities included inventory control, P&L comparing current
year to previous year, planning and staffing a 130K-250K earning restaurant. I created daily financial reports; and
payroll. Outside of the restaurant, I was also a member of Pappas’ Catering; where I was in charge of either team events
or solo events. I loved the days when I was driving a van with a huge grill hitched to the back. I have experience in
opening new locations, as a newemployee in Houston and as a Manager and Office Administrator in Arlington, Texas.

Assistant to the Dean of FA; Charles Shultz, Chair of FA; Donna Meeks, and Dishman Gallery Preservationist; Lynne
Lokensgard and Office Administrator, Donna Wildridge. I was located in the Chair’s office, which is housed in the

floor. There are current exhibitions at least six times a year, including BFA capstone presentations and with an added
MFA solo show. We featured, artist-in-resident with workshops and gallery exhibition. Two major fundraisers which
raised money for scholarships and building improvements were the “Le Grande Ball”and “The Dishman Competition.”
In between shows I would work on gallery preparation, which included speckling, sanding, and painting gallery walls.
Organizing, hanging, and lighting artwork. Setting up tables and organizing pedestals for gallery shows. Ordering and
installing signs for gallery. Constant contact with gallery director to insure everything was on the right track.
