4. Introduction
of "Niochet's
Catering"
Niochet’s Caterign emerged in January 2021
as a small family business dedicated to the
catering service of frozen products such as
tequeños and pastelitos. Mainly tequeños as
appetizers for events (birthdays, weddings,
baptisms, work meetings, among others). In
addition to this, we are focused on providing
home delivery service to all that people at
home who wants to spend a pleasant
afternoon with their family frying and eating
tequeños.
What Tequeños are? According to Venezuelan
chefs such as Sumito Estévez, they define it
as a popular food in Venezuela (also called
deditos de queso in Colombia), normally used
as fast food at parties and meetings. they
consists on a fried wheat flour dough that
covers hard white cheese or palm heart
cheese.
In this magazine we will present somes
theories about the origin of this delicious
food. In addition, our preparation process,
tips and curiosities, and why our service is the
best option when it wanting comes to eating
or sharing a delicious tequeños with the
family at home or with friends in an event.

5. Origin of
tequeños
According to Professor Rafael Cartay:
The well-known professor Rafael Cartay,
theorist of Venezuelan gastronomy, says that
tequeños comes from the town of Los Teques,
in the state of Miranda, at the time of the
colony when the employees of wealthy
families used the leftovers after having made
bread. They wrapped the cheese and the
remaining dough that they and then fried then
and baptized them as tequeños.
Family Báez from Los Teques:
This theory states that they were invented in
the 20th century by the oldest of the Báez
sisters, Josefina Hernández de Oviedo. At the
beginning they were called cheese rolls and in
the 60's the name changed to tequeños. It
become popular not only in Los Teques and
Caracas, La Victoria, Las Tejerías thanks to
Los Teques distributors. These distributors
would normally travel in Caracas using the
train, from El Encanto to Caño Amarillo and
they were so famous that when people would
see them arriving they would shout "Tequeños
arrived" and normally in Caracas people
would ask "where are the tequeños?"; this
denomination finally relapsed and was
adopted by the preparation itself.
Other theory:
Others assure that its origin took place in
Zulia state, specifically in Villa del Rosario.
Apparently, this could be true since in this
region cheese production is generous and it is
not unusual for someone to wrap a piece of it
in a dough of wheat flour and then fry it.
Zulianos tend to have many fried
preparations.
In summary, tequeño is a preparation 100%
with Venezuelan made with flavor and love.

6. Recipe by
“Niochet’s
Catering”
There are many ways to prepare
tequeños' dough. We have our own style
and we add certain ingredients that
most recipes do not have, to give the
dough its unique color and crunchiness.

TO PREPARE 100 TEQUEÑOS
INGREDIENTS:
1 kilo of cheese.
1 kilo of all-purpose wheat flour.
1 tablespoon of salt (15 grams).
1 tablespoon of sugar (15 grams).
2 cups of warm water.
2 tablespoons of oil.
1 tablespoon of instant
yeast (15 grams).
7. Over in a bowl, sift the flour
together with the salt. Make
a hole in the center of the
flour as a “volcano”. Place
inside oil, yeast, sugar and
finally warm water. See

Incorporate and knead until
it detaches from the fingers
and it feels homogeneous
dough. Let it rest for about
15 minutes. See image 3.
PREPARATION:
Cut the cheese into pieces 6
cm long x 1 cm wide. See

8. We proceed to cut rolls of 1
cm each, this will be use to
roll the pieces of cheese.

Then, for their refrigeration
we wrap them all to paper.

With a machine to knead the
dough, knead it until it has a
fine fabric, which will then be
rolled up. See image 4.

how to cook
it very well!
HOW TO PROPERLY FRY YOUR
TEQUEÑOS TO PREVENT THE CHEESE
FROM COMING OFF?
To avoid the disaster of the cheese coming
out of the dough that surrounds them, the
most important thing is to fry them at an
ideal temperature. As we well know, our
product is sold frozen, therefore, when
frying them, it is best to leave them out of
the refrigerator for at least 25 minutes so
that they reach a suitable room
temperature and in this way they can be
fried and then removed from the oil in
perfect state.

12. HOW DO YOU KNOW WHEN THE OIL IS
READY TO FRY?
One of the most used techniques to know if
the temperature of the oil is adequate, is
to introduce a piece of dough. Depending
on whether it stays on the bottom or rises,
it can be calculated if the oil is hot
enough. If it rises quickly, it is ready to start
frying your rich tequeños.
HOW MUCH OIL YOU SHOULD USE TO
FRY TEQUEÑOS?
Use an amount of oil enough to cover
tequeños in the cauldron , that is, that it
covers the surface of these so that they
can be fried in the most optimal way for 2
or 3 minutes.
