2. INTRODUCCIÓN
LOS CARBOHIDRATOS NO SON SÓLO UNA FUENTE IMPORTANTE DE PRODUCCIÓN
RÁPIDA DE ENERGÍA EN LAS CÉLULAS, TAMBIÉN SON LAS ESTRUCTURAS fundamentales
de las células y componentes de numerosas rutas metabólicas. En la actualidad se
reconoce que los polímeros de azúcares unidos a proteínas y a lípidos son un sistema de
codificación de alta densidad. Los seres vivos aprovechan la vasta diversidad estructural
de estas moléculas para producir la capacidad informática necesaria para los procesos
vitales. La estructura y la química de moléculas de carbohidratos típicas que están
presentes en los seres vivos, y se introduce la glucómica, la investigación del código de
los azúcares.
3. ¿QUÉ SON LOS CARBOHIDRATOS?
Los carbohidratos (hidratos de carbono o glúcidos) son
compuestos orgánicos formados por carbonos, oxigeno e
hidrogeno. El numero de carbonos es variable, pero solo las
hexosas (con seis carbonos) y las pentosas (con 5 carbonos) y
sus polímeros (unión de varios) son nutricionalmente
importante. Son solubles en agua y se clasifican de acuerdo a
la cantidad de carbonos o por grupo funcional que tienen
adherido.
4. TIPOS DE CARBOHIDRATOS
Monosacáridos: son los
azucares que no se pueden
hidrolizar hacia
carbohidratos mas simples.
Disacáridos: son productos de
condensación de dos unidades
de monosacáridos; los ejemplos
son maltosa y sacarosa.
Oligosacáridos: son productos de
condensación de 3 a 10 monosacáridos.
Casi ninguno es digerido por las
enzimas del ser humano.
Polisacáridos: son productos de
condensación de más de 10 unidades
de monosacáridos, los ejemplos son los
almidones y las dextrinas
6. RUTAS DEL PIRUVATO. FERMENTACIONES
El piruvato formado en la glucólisis puede seguir diferentes rutas catabólicas, dependiendo del
organismo o de la célula analizada.
En los organismos aerobios, o en células en condiciones aeróbicas, la glucólisis constituye el primer paso en la
oxidación de la molécula y el piruvato continua su degradación hasta la oxidación total en la que los átomos de
carbono formarán CO2 y los hidrógenos (hidrogeniones y electrones) formarán H2O.
8. CICLO DEL ÁCIDO CITRICO: El ciclo del ácido cítrico (de Krebs, o de los ácidos tricarboxílicos) existe en
todos los organismos aerobios, y desde el punto de vista evolutivo es más reciente que la glucólisis.
9. CONCLUSIÓN
la importancia de los carbohidratos no es dejar de comerlos,
sino evitar los carbohidratos de baja calidad. Es decir,
cereales refinados y cereales con azúcar añadido, ya que
aportan un valor nutricional limitado. Además, su alta carga
glucémica se ha relacionado con niveles altos de azúcar en
la sangre, resistencia a la insulina y niveles altos de
triglicéridos. Por lo que, además del tipo de tu dieta, la
calidad de la alimentación será fundamental para
cuidar tu salud.
