7. Principles of food Preservation
A good method of food preservation is one that slow down the or prevennt altogether the action
of the agent of spoilage . Also , during the process of food preservation , the food should not be
dmaged .the Principles of foood Preservations are:-
1. Removal of micro organsim or inactivating them; this is done by removing air ,water ,lowering
or increasing temperature ,increasing the concentration of salt or sugar or acid in foods . For
the preservation of green leafy vegetable ,the water should be removed ,this is done by drying
.
2. Inactivating enzymes ; Enzymes foumd in food can be inactivated by changing their conditions
such as temperature and moisture. One of the Methods of Preservations of peas is to put them
for few min in boiling water .This method inactivates enzymes and thus preserves food.
3. Removal of insects ,worms and rats,etc ; by storing food in dry ,air tight container thus
preventing from the insects , rats ,worms from destroying food.
