1. Oat and Raisin Cookies
Ingredients:
540gm unsalted butter at room temperature
320gm caster sugar
320gm soft dark brown sugar
4 eggs
½ tsp vanilla extract
760gm plain flour
2 tsp salt
2 tsp bicarbonate of soda
1 tsp cinnamon
220gm rolled oats
440gm raisins
Method:
Beat softened butter and sugar until they are
“light & fluffy”
Add the eggs one at a time, scraping down
between additions, add vanilla
Add the flour, cinnamon, salt and bicarbonate
of soda and mix to smooth dough, fold in the
raisins
Pipe on to silicon paper, (or roll in Clingfilm
and refrigerate if to be used later)
Cook at 170*c for 8-10 minutes, or until golden
brown but still “gooey” inside
Allow to cool and serve
