1.1 GENERAL FOOD HYGIENE
 All over the world people are affected every
day by consuming unhygienic food.
 Food hygiene usually refer to contamination
with ‘microorganisms’ or ‘microbes
 For prepare safe and hygienic food food
handler or worker should healthy and clean.
 The food we eat should be free from
contamination such as microorganisms and
chemicals.
SOME POINTS RELATED TO
GENERAL FOOD HYGIENE
 FOOD HANDLING
There are various process control requirements
to be satisfied at each step of the handling
process.They cover the each of the following
steps for food:
a. receipt b. storage
c. processing d. display
e. packaging f. transportation
g. disposal

 Make sure the everything (utensils) used in
preparing the food is clean and germs free.
 Ensuring that food preparation areas and
surfaces are clean and hygienic.
 Destroy the bacteria in food through
adequate cooking or processing.
 Protect the food from risk of contamination.
1.1 INTRODUCTION TO PERSONAL
HYGIENE
 Good personal hygiene is essential to
promoting good health.
 The first step of good health
 Not only protects you from poor health, but
also shields those around you from suffering
illnesses
 Make you feel good about yourself and keep
you free of bacteria, viruses and illnesses
1.2 SOME POINTS RELATED TO
GENERAL PERSONAL HYGIENE
If you want to minimize your risk of
infection and also enhance your overall
health, follow these basic personal
hygiene habits:
1.2.1 Wash your hands
 Washing your hands before preparing or
eating food,
 After going to bathroom, after going
coughing or sneezing, and after handling
garbage.
 keep a hygiene product, like an alcohol-based
sanitizing gel, handy for when soap and water
is not available.
1.2.2 Bath regularly
 First regular activities .
 Wash your body and your hair often
 Not need to shower or bathe every day but
should clean your body and shampoo your
hair at regular intervals that work for you .
 It helps to decrease the causes of illnesses.
1.2.3 Trim your nails
 keeping your finger and toenails trimmed
and in good shape will prevent problems such
as hang nails and infected nail beds.
 feet that are clean and dry less likely to
contract athlete’s foot.
1.2.4 Brush and Floss
 Should brush your teeth after every meal.
 At the very least, brush your teeth twice a day
and floss daily.
 Brushing minimize the accumulation of
bacteria in your mouth, which can cause
tooth decay and gum disease.
 To maintain a healthy smile, visit the dentist
at six-months intervals for checkups and
cleaning.
1.2.5 Sleep Tight
 Get plenty of rest 8 to 10 hours a night, so
that you are refreshed and are ready to take
on the day every morning.
 Lack of sleep can leave you feeling run down
and can compromise your body’s natural
defenses, your immune system.

 Good habits help keep your healthy.
 Food handler or worker should to be
healthy to offer hygienic food which is free
fro m bacteria and germs.
Therefore, the general personal & food
hygiene is very important for living
healthy life without having any illnesses or
diseases.
