Firstly, to prepare these delicious recipes, you need to have some basic
ingredients like eggs, flour, buttermilk (or regular milk), melted butter,
baking powder, or baking soda, and some additional ingredients like
flavors and toppings to make them taste even better.
Always use room temperature ingredients because that way you will get
the perfect waffle batter well mixed for much fluffier and more delicious
waffles. To achieve this, just set out your eggs and buttermilk and melt
your butter in advance to bring all the ingredients to room temperature
before mixing them together.
One of the most important things when making waffles is to use a raising
agent to achieve a fluffier texture. Most of these recipes call for baking
powder, baking soda, or a combination of both, but those aren't the only
possibilities—aside from their appearance, the main difference between
American and Belgian waffles is that Belgian waffles use dry yeast as the
raising agent. The best way to add the raising agent is to mix it with the
flour, salt, and sugar first and then mix in the wet ingredients. And be sure
that your baking powder is as fresh as possible—you want your waffles to
rise and be fluffy, not tough and dense.
Another important ingredient is the eggs—they give texture and a nicer
flavor. Using them at room temperature is always a good idea because they
are easier to incorporate into the batter and will rise more easily than cold
eggs which are more viscous. Separating the eggs and whipping the egg
whites and incorporating them into the batter add lightness to the batter
and makes for truly fluffy waffles. It’s an extra step that most recipes in
8. this cookbook have but that you can skip if you prefer more dense waffles.
In that case, just incorporate the eggs whole.
Buttermilk is also an important ingredient that does true magic in waffles
—the acidity and the richness of the buttermilk contribute to developing
the best waffle flavor and texture.
Melted butter used in the waffle batter is not only going to make the
waffles rich and flavorful but will also prevent them from sticking when
cooking. The more butter used, the better and richer the waffles will be.
Also, always use vanilla extract to, well, "extract" the maximum flavor
from the batter, but sometimes almond extract, coconut extract, or even
lemon extract will work perfectly fine. For a more unique flavor boost, try
using various liqueurs, or even vermouth.
Pick a good waffle iron, may it be a circular shape or a square shape.
Always be sure to preheat your waffle iron well and also spray it with a
cooking spray to prevent the waffles from sticking. You can also use some
butter and brush the waffle iron with that, but cooking spray works better
because the oil goes deep in the iron holes.
Just like making a cake batter, pancake batter, or doughnut batter, you
should never overmix the waffle batter. It's always better to have some
lumps and to be undermixed than to be smooth and shiny and overmixed.
When a waffle batter is overmixed, you will end up with tough waffles that
are way far from the fluffy and airy waffles you want.
All waffles need to be topped with something in order to give you
maximum pleasure and full enjoyment when consuming them. Give them
a dollop of Greek yogurt, a drizzle of honey, or a splash of maple syrup.
Even though waffles have been around since the 14th century (when they
were invented in the Netherlands), they are still very popular nowadays
because they look gorgeous plated with whipped cream and some fruit on
top. You can take a nice picture and share it on social media—waffles are
an “Instagramable” meal that will bring so much attention to your social
media profiles.
