Tesco BBQ
On Wednesday 25th May we was invited to
take part in a Veggie BBQ at Tesco Head Office
to raise awareness of National Vegetarian
Week and the launch of Tescos’ exciting new
Meat Free range of products. During the day
we gave out hundreds of free samples ranging
from burgers and sausages, to energy drinks
and cookbooks. We have a fantastic day and it
really helped to raise the profile of vegetarian
products.

Meat Free in Manchester
We had a great time at Meat Free in
Manchester on Saturday 21st May! The event
was organised to coincide with the launch of
National Vegetarian Week, and the whole of
The Vegetarian Society took over Albert Square
in Manchester city centre promoting both
National Vegetarian Week 2011 and the
benefits of a Vegetarian diet. Our stall was
extremely busy, we were handing out free
samples from lots of our lovely approved
clients, and also gave away free goody bags!

100g self-raising gluten free flour
(you can use plain gluten free flour
but you will also need to add 1 tsp
gluten free baking powder)
100g butter
100g sugar
2 free range eggs, beaten
1 tsp xanthan gum
Cream together the butter and sugar,
and gradually mix in both eggs. Add
the xanthan gum (and baking powder
if using) to the flour and gently stir
into the butter, sugar and egg mix.
Spoon the mixture into 12 cupcake
cases, and bake at 180 C for
approximately 15 minutes. Decorate
with chocolate spread and enjoy!

13. Harry’s Nuts is the successful
Fairtrade nuts brand developed by Harry
Hill and Fairtrade nut company
Liberation Foods. Harry makes no
money from this – he came up with the
idea to help smallholder peanut
farmers in Malawi sell their crops in the
UK and not for ‘peanuts’ at the
roadside. The new Fairtrade crunchy
peanut butter will be launched in July.
Harry says: “I crush all the nuts
myself with specially adapted hob
nail boots. It's the only way I can
get that lovely crunchy texture.
The only problem is I am often
followed home by squirrels – but

14. Haggis with baked onion
and feta
1 tbsp olive oil
4 large onions
1 tbsp balsamic vinegar
200g chopped tomatoes
300g of haggis
75g Vegetarian cheese – feta and Cheshire work
really well!
Wash the onions and place them unpeeled into an
oversived casserole dish. Drizzle over the oil and
season with salt and pepper. Roast for 40 minutes
or until they feel soft. After 20 minutes place the
tomatoes around the onions. Using a sharp knife
carefully split the onions into quarters and add the
balsamic vinegar. Crumble the haggis into each
onion and top with cheese and return to the oven
for 10 minutes until the cheese is bubbling and
golden. I have made these without cheese and
they still taste delicious. Serve straight away.

It’s the mystery ingredient!
Veggie haggis… not just for Burns Night, says our Kitchen Doctor!
The Kitchen Doctor
Serves 4
Vegetarian Haggis is a firm favourite of mine and
should not be left just for Burn’s night, although
should certainly be eaten then. Why not get
adventurous with your haggis recipe and turn it
into curry, chilli, pie, apple and haggis strudel,
soup, sweet and sour, stuffed vegetables, Chinese
style - with pancakes and lettuce, Mexican wraps,
casserole, hotpot, rolled with aubergine or serve with
pouched pears, feta and salad? i’m sure once you
get creative you will come up with new and
exciting ways to enjoy this scottish delicacy.
The society currently approves 2 readymade
vegetarian haggis, both of these are delicious and
work well in these recipes. Macsween and Halls

Cook's Tip:
serve the onions whole –
they can get messy if you
try to divide them.
15. Haggis and onion bhaji
200g gram flour
1 tbsp curry powder
½ tsp cumin seeds
½ tsp chilli power
150ml water
400g haggis
3 onions, peeled and thinly sliced
lengthways
2cm grated ginger
2 garlic cloves, crushed
Vegetable oil for frying
Place the gram flour, curry powder, cumin
seeds and chilli into a bowl and add the water
to make a thick batter.
Using your hands, mix the haggis with the
onions, ginger and garlic then form into balls.
Dip the balls into the batter mix and coat evenly.
Either in a deep fat fryer or large pan heat the
oil. To test the temperature drop a little mixture
into the oil, it should start to gently fry almost
immediately.
Add your bhajis to the oil to fry in batches for
approximately 5 minutes. When cooked place
on a paper towel in order to absorb some of the
excess oil.
Serve with a squeeze of lemon and a sweet
chilli dipping sauce and light salad.

Home Cooking

Red Pepper, Tomato and Vintage
Cheddar tartlets with a hint of chilli
2 Large onions – peeled and chopped
50g Olive Oil
2 x 400g tins chopped tomatoes
1 Red Chilli, deseeded and finely diced
5g Sugar
2 Cloves garlic peeled and chopped
1 tbsp finely chopped rosemary
200g ready made puff pastry,
such as Jus Rol
2 Ramiro red peppers cut into strips
Salt and pepper
200g Pilgrims Choice vintage
cheddar – grated
Cook the onions in olive oil until soft and melting
for about 30 mins.
Add the tomatoes, chill, garlic, rosemary, and
peppers to the onions and cook over a gentle
heat for about 45 mins (stirring occasionally)
until everything has reduced and become really
thick. Remove from the heat, cool and add
some seasoning.
Meanwhile, roll out the pastry and line 8
individual tart tins.
Scatter half of the cheese in the base of the
pastry cases. Spoon in the tomato filling and

Bake in a pre-heated oven at 200c, 400f or gas
6 for about 30 minutes until the pastry is crisp
and golden.

17. Pumpkin Latte
1/2oz (1.5cl) 1883 Barista
“Pumpkin Spice” Syrup
1/2oz (1.5cl) 1883 Barista
“Caramel” Syrup
1oz (3cl) Espresso
7oz (21cl) Milk
Pour the syrups and milk into a steaming
pitcher. Steam and foam the milk-syrups
mixture or heat milk mixture while whisking if
you don’t have a steamer (do not boil). Pour
the espresso into a tall tempered glass. Add
the milk mixture, topped with the dense
flavoured foam. Dust lightly with cinnamon
powder. Enjoy!

Sesame crusted Capricorn on warm
puy lentil and roasted pepper salad
1 red and 1 yellow pepper
1 red onion, cut into wedges
2 cloves garlic, crushed
4 tbsp olive oil
150g Puy lentils, rinsed
2 tbsp balsamic vinegar
2 tbsp roughly chopped flat leaf parsley
2 x 100g Capricorn Somerset
Goats Cheese, halved
2 tbsp sesame seeds
Preheat the oven to 200C (400F, gas 6). Halve
and deseed the peppers then cut into wedges.
Toss the peppers, red onion and garlic together
in a baking tray with 1 tbsp olive oil and
seasoning. Roast for 20-25 mins until
beginning to caramelise.
Meanwhile, cook the lentils in boiling water for
15-20 mins until tender. Drain and mix with 2
tbsp olive oil, the balsamic vinegar, parsley and
seasoning. Stir in the roasted vegetables.
Press the cut sides of the Capricorn Somerset
Goats Cheese in the sesame seeds. Heat 1 tbsp
oil in a non-stick frying pan, add the Capricorn
Somerset Goats Cheese, seed-side down, and
cook for 2-3 mins until golden, over a medium
heat. Serve on top of the warm lentil salad.
