Ecuadorian cacao has a floral, nutty flavor profile and is grown sustainably and organically. While Ecuador was previously a top exporter in the late 1800s, disease wiped out 95% of the crop in 1916 and production declined. However, recent government initiatives to boost planting and educate farmers have led to a resurgence of the industry. The unique terroir of Ecuador, including soil, water, altitude and proximity to volcanoes, gives its cacao a distinctive flavor that cannot be replicated elsewhere.
