Come si presenta il cacao? Da dove

    viene?
       Si presenta in forma di albero sempreverde, alto 5–10 m
       Fiori :Piccoli fiori sparsi a mazzetti, bianchi, verdi o rosei, che
        spuntano direttamente sul tronco o sui rami adulti; l‘ovario è
        sessile.(attaccato al ramo)
       Dall’ovario nasce il frutto, la cabossa, di colore giallastro-
        verdognolo, che diventa bruno-rossastro a maturazione,
        contenente da 25 a 40 semi; i semi sono immersi in una
        sostanza ricca di zuccheri, chiara e di consistenza gelatinosa.
       All'interno di una polpa asprigna sono racchiusi numerosi semi
        ovali e piatti, a forma di mandorla, di colore bruno-violaceo,
        disposti in 5 file.

Qualità del cacao

                                 CACAO:
             criollo                                      trinitario
                                  forastero
    Criollo (cacao nobile): originario del Messico, molto presente in
       Ecuador e Venezuela; tra le varianti di cacao più pregiate e
       delicate
    Forastero (cacao di consumo):Molto diffuso, con esso viene prodotto
       l'80% del cioccolato. Si trova in Brasile, in Africa occidentale e nel
       sud-est Asiatico.
    Trinitario: ibrido dei primi due. Originario di Trinidad, con
       caratteristiche intermedie ai primi due. Coltivato in Messico,
       Colombia, Venezuela e Caraibi.

Processo di Lavorazione per arrivare

    alla tavoletta di cioccolato.
       Una volta che i semi vengono fatti fermentare ed essiccare,
        si passa al processo di tostatura ( che avviene tra i 98 e i
        104 gradi) e di triturazione, da cui si ottiene la Massa di
        Cacao. La massa di cacao può essere poi divisa e in questo
        modo si ottiene il burro di cacao e la polvere di cacao, che
        una volta riunite ( insieme alla vaniglia) formano la Pasta di
        Cacao, quindi il cioccolato fondente al 100%. Più si
        aggiunge zucchero, più la percentuale di fondente
        diminuisce.
       Cioccolato al Latte: pasta di cacao con l’aggiunta di latte
       Cioccolato Bianco: lavorazione del burro di cacao con lo
        zucchero, la vaniglia e il latte.
