Spinach contains flavonoids that can help prevent inflammation and cancer. Researchers identified over a dozen flavonoid compounds in spinach that function as anti-inflammatory and anti-cancer agents. Spinach extracts have been shown to slow stomach cancer cell division and reduce skin cancers in studies. Spinach is also an excellent source of many vitamins, minerals, protein, and fiber. However, those with kidney stones should avoid spinach due to its purine and oxalate content, which can increase risk of kidney stones. Consuming tofu with spinach is also not recommended due to their combined oxalate and calcium increasing stone risk.
