2. Potica je ena izmed slovenskih kulinaričnih posebnosti, ki se je na Slovenskem razvila pred približno 200 leti. Potica je narejena iz dobrega kvašenega testa, v katerega zavijemo nadev. Včasih so jo pekli le za božič in veliko noč, danes pa najrazličnejše potice pečemo tudi za družinske in druge praznike. Praznična potica je slovenska sladica, na kar moramo gledati s ponosom. Tudi zato, ker je s pripravo potice kar nekaj dela. Navsezadnje tudi trud in dobra volja, ki ju vmesimo v testo, pripomoreta, da je potica tako zelo slastna in posebna.
3. Za potico uporabljamo veliko različnih nadevov. Slovenske gospodinje najpogosteje pečejo orehovo. Pripravljajo tudi lešnikovo, mandljevo, kokosovo, rozinovo, pehtranovo, rožičevo … Potica se peče v vseh slovenskih pokrajinah, zato toliko različic. Nekoč so jo pekli v krušni peči, v glinenih modelih, danes jo najpogosteje v električni pečici, za peko pa je na voljo velik izbor kovinskih modelov, seveda se še vedno uporabljajo tudi glineni. Odločil sem se, da vam predstavim makovo in „loško“ potico. V božičnem času iz naše kuhinje diši po raznovrstnem pecivu. Toda potica ima na naši mizi posebno mesto.
4. Potica je ogledalo gospodinje, rada reče moja stara mama. Danes potice v marsikaterem domu ne pečejo več. Gospodinje so preveč zaposlene ali pa ne obvladajo te veščine. Mami pravi, da si moraš za potico vzeti čas, uporabiti najboljše sestavine in pripravljati to posebno sladico z veliko ljubezni. Pravi, da peka ne bo uspešna, če se je lotiš slabe volje in na hitro. Najprej pripravimo delovni prostor, da nam ni nič v napoto, v kuhinji mora biti prijetno toplo, da testo lepo vzhaja in se ne „prehladi“. Vse sestavine zložimo na pult, pripravimo nadev in bel prt za valjanje testa.
5. Testo: 800 g pšenične moke TIP 400 100 g sladkorja 100 g zmehčanega masla 4 rumenjaki 35 g svežega kvasa 1 vanilin sladkor 1 kavna žlička soli 3 cl ruma naribana lupina neškropljene limone toplo mleko
6. Kvas zmešamo z žličko sladkorja in 10 cl toplega mleka. Zlijemo ga v jamico, ki smo jo naredili v moki, ostale sestavine dodamo na rob. Počakamo, da kvas vzhaja. Testo gnetemo z električnim mešalnikom, dodamo toliko mleka, da dobimo voljno, ne premehko testo. Gnetemo toliko časa, da začne odstopati od posode, površina pa se svileno sveti.
7. Zgneteno kepo malo naoljimo po celi površini, pokrijemo z bombažno krpo in jo na toplem pustimo vzhajati. Npr. v mlačni električni pečici. Testo je lepo vzhajalo. Lahko ga razvaljamo.
8. Makov nadev 250 g mletega maka prelijemo s toliko vrelega mleka, da dobimo gosto maso. Počakamo, da se malo ohladi in dodamo še veliko žlico kisle smetane, 3 cl ruma in sladkor po okusu. Nadev mora biti mazljiv, če je preredek, nam uhaja, ko potico zvijamo. Pri nas imamo radi precej sladko makovo potico.
9. Nadev za „loško potico“ Loške potice ne boste našli v nobeni kuharski knjigi. Tako je moja mami poimenovala svojo varianto potice s suhim sadjem. Pripravimo 300 g suhega sadja: jabolčne krhlje, fige, slive, zlate rozine in orehe. Večje kose narežemo in za en dan ali vsaj čez noč namočimo v mešanico 10 cl ruma in 10 cl vode. Pokrijemo in vmes večkrat premešamo. Za premaz testa potrebujemo še pol lončka kisle smetane in štiri žlice tekočega medu.
10. Testo stresemo na pomokan prt in ga po vrhu pomokamo. Razvaljamo ga na širino, ki zadošča za dve potici – upoštevamo velikost modelov. Debelo naj bo za prst, raje še malo manj, če smo spretni .
11. Na eno stran testa enakomerno namažemo makov nadev. Na drugo pa namažemo kislo smetano, posujemo z namočenim sadjem in prelijemo z medom. Testo prerežemo med nadevoma in ga tesno zvijemo.
12. Zvitka položimo v dobro naoljena modela. Še enkrat pustimo vzhajati na toplem. Lepo vzhajana potica.
14. Pečico segrejemo na dvesto stopinj. Potico med peko pokrijemo z alu folijo, temperaturo po petnajstih minutah zmanjšamo na sto osemdeset. Pečemo približno eno uro, da skorja postane zlato rjava.
15. Pečeno potico pustimo v modelu približno petnajst minut. S topim nožem zrahljamo robove, da jo lažje stresemo iz modela. Pustimo, da se ohladi na prtu, ki ga položimo na rešetko.
