menudo era una herramienta opresiva, que
involucraba cuestiones de género, clase y raza,

[...]La dinámica de la cocina se desarrolla con mucha
organización. Al tener cargos, todas las mujeres saben lo que les
corresponde hacer. Las más jóvenes acomodan y sirven las
mesas, llevan platos llenos y regresan los vacíos o toman el
metrapil para moler sobre el metate.
Las adultas se ocupan de lavar los trastes, acomodar los
utensilios de la cocina, ver que no falte leña. Muchas de ellas son
madres, que involucran a sus hijas —si éstas son jóvenes— en las
labores. Las mujeres mayores son las que están cerca del fuego,
en comales calientan las tortillas, o preparan el atole o el café y
cocinan los frijoles o el arroz. La “segunda” está siempre a un
lado de la cazuela grande —en donde se cocinan los guisados
principales— cuyo contenido cuida con mucha paciencia,
hablando de ellos como entes animados: “mi mole quiere caldo”
o “mis frijoles quieren sal”. Las actividades se organizan a través
de un escalación que inicia con las más jóvenes y con menos
experiencia y finaliza con las mujeres mayores que “ya conocen
la costumbre”.

18. Cuando la mayordoma calcula que tienen el tiempo suficiente,
le pide a la “segunda” que sirva los platos para que las mujeres
coman, a veces antes que los hombres, pero generalmente
cuando ya han terminado de serviles a ellos. Por el cargo, los
platos del guiso principal del día los sirve la “segunda” primero a
la mayordoma hasta hacerlo a la última diputada. Otras mujeres
grandes sirven los frijoles o el arroz y calientan las tortillas. Las
jóvenes acercan a sus compañeras los refrescos y servilletas.
Muchas de ellas sólo mojan las tortillas en el caldo o el mole y
guardan la carne para llevarla a su casa. Cuando terminan de
comer, se dicen “gracias” las unas a las otras, agradeciendo —me
dijeron— “que comimos juntas”. (CURIEL, p.181, 2019)
