The quality data suggests there are pockets of low quality hard red winter wheat in Ontario with very weak gluten strength, below flour quality standards. Variability in wheat protein levels appeared greater in samples from the Southwest region, as shown in a scatter plot of individual sample protein levels. Building a Ruby gem involves generating a gem skeleton using the "bundle gem" command which sets up the necessary file structure including a Gemfile, README, Rakefile and gemspec. The code for the gem is added to the /lib folder following a test-driven development approach with tests added to the /spec folder. Once the gem is complete, it can be published to RubyGems.org by building the gemspec, adding credentials, and pushing the generated gem file.
