Food Handling and Storage:
Differentiating Plastic from
Wooden Pallets

According to the Department of Agriculture and Water Resources, the overwhelming majority of food
sold in Australia is grown and supplied by the country's farmers. More than 90 per cent of fresh produce
like fruits, vegetables, milk, eggs and meat sold in supermarkets are domestically produced.
Due to the high demand of agricultural products in Australia, the government aims to protect the
public’s health by ensuring the safe handling and storage of food. For farmers, this means using storage
solutions that will not contaminate or damage the food during handling and shipment.
Currently, the most popular storage bins used in the agricultural industry are wooden and plastic
pallets. Each crate has their own characteristics that make them suitable for storing food products.
Wooden pallets
Wood tends to be considered unhygienic when it comes to storing food because of its porous quality,
making it difficult to disinfect. However, The Institute of Food Technologists states that wood in
contact with food has not been found responsible for any food-borne outbreak. Although it is less
commonly used today for fresh produce because of the misconception, some traditional sectors
worldwide such as cheese manufacturers and the wine industry still utilise wooden bins to store and
transport goods.
Plastic pallets
According to the Food Authority of New South Wales, containers used to store fruits and vegetables
need to be food grade. This means that the container is made from appropriate materials that will not
allow bacteria to contaminate the food. Plastic pallets made from high-density polyethylene are very
safe and are not known to transmit any chemicals into fresh produce. The HDPE bins do not harbor
bacteria or absorb moisture, making them well-suited for contact with newly-harvested fruits and
vegetables.
The agricultural industry in Australia uses wooden and plastic pallets that are adequate to store food
products post-harvest. Storing fresh produce properly in these pallets helps eliminate food-borne
illnesses and stops bacteria from spreading.
