1. Contingency Plan for Outside Catering
Introduction note:
Due to the inherent contingencies associated to Outside Catering a back up
plan should always be planed and taken in great consideration.
During negotiation
Organizers should be informed and briefed during the negotiation
process that we always include a back up plan for our outside caterings.
Besides they should also be informed and discuss the following:
Determine reasons for going to a back up plan
Location for back up venue
Transportation
Decision timings (set according to the specific situation)
Details and restrictions of back up venue
Security restrictions
After negotiation
Event orders to include detailed back up plan
Catering/Banquet Managers to assure that back up is completely set up
Other Managers and departments (such as the Property, AV, Chefs and
Stewarding) have to be also completely prepared (which includes mise-
en-places, equipment, moving and action plan, and determine who is
responsible for what) for back up plan accordingly do Event Order
Specifications.
Contingency Plan
Decision to be taken by the Catering/Banquet Manager with consonance
with the organizer.
