350 g belog brašna (T-500)
70 g graham (integralnog pšeničnog) brašna
40 g ražanog integralnog brašna
40 g ječmenog integralnog brašna
50 g žutog kukuruznog brašna

---------------------------------------------------------
1 supena kašika golice (ljušteno bundevino seme) sirovo
2 supene kašike suncokreta (ljušteno) sirovo
1 supena kašika lanenog semena (mlevenog)
1 supena kašika susama
/ovo po želji: 1 supena kašika pšenične klice (sirovo ili prženo: zavisi šta nađete u radnji)/

2 dl mlake vode*
1 kafena kašika morske soli
*Količina vode je data za integralni hleb. Ako menjaš sastav brašna, moraš menjati i količinu vode (2
dl: + /-) jer svako brašno različito prima vodu)

za KVAS:
10 g kvasca
1,4 dl vode
1 kafena kašika šećera
U lončić sipati 1,4 dl vode i zagrejati da bude mlako: da se prst može držati u njemu a da ne peče.
Izdrobiti 10 g (svežeg) kvasca u mlaku vodu, posuti 1 kafenom kašikom šećera i ostaviti da nadođe (to je
oko 4-5 minuta).
U međuvremenu:
U posudu za mešenje prvo sipati 2 dl vode, dodati 1 kafenu kašičicu morske soli. Promućkati posudu da
se so otopi.
Sipati brašno (ukupno 550 g + semenke) u posudu.
Nadošli kvasac promešati kašičicom da se masa ujednači i sipati u posudu sa brašnom.
Uključiti mašinu za hleb da zamesi glatko testo. (na programu broj 9 za brzi hleb)
Ako je testo retko i lepljivo, dodati još malo belog brašna, ako je tvrdo, dodati još malo vode.
Na otprilike 10 minuta pred kraj mešenja hleba, uključiti električnu rernu na 50 o
C.
Kada mašina stane sa mešenjem, osaviti testo u mašini oko 10-15 minuta da se odmara na toplom.
Zatim izvaditi testo iz posude na pobrašnjeni sto.
Rukama blago zamesiti (formirati) testo dužine tepsije u koju ćemo je staviti da se peče. Tepsiju malo
nauljiti, četkicom za kolače namazati sve stranice i dno i staviti testo u nju.
Tepsiju (formu) sa testom staviti u rernu i ostaviti još 30 do 45 minuta da hleb nadođe (otprilike za
debljinu prsta iznad tepsije).
Uključiti rernu (sa 50 o
C) na 200o
C i peći dok hleb ne porumeni (oko 40-45 minuta).
