Oatmeal Protein Bars
Ingredients
• 1 cup almond butter
• 3 ounces vanilla plant-based
protein powder
• 1/2 cup maple syrup (you can
also use honey)
• 2 eggs
• 2 cups gluten-free rolled oats
• 1/2 cup unsweetened coconut
• 1 teaspoon baking soda
6. Directions
1. Preheat oven to 350°F. Spray a 9-by-11-inch pan with cooking
spray.
2. In a small bowl, use an electric mixer to mix almond butter,
protein powder, and maple syrup. Beat in the eggs.
3. Stir in rolled oats, coconut, and baking soda, and mix well.
4. Firmly press stiff dough into the pan using the back of a spoon.
5. Bake for 12 minutes or until the top browns slightly.
6. Cool pan on a rack, cut into 18 squares, and store leftovers in an
airtight container.

7. Skinny Crockpot Thai Peanut
Chicken
Ingredients
• 4 boneless, skinless chicken breasts
• 1 red pepper, diced
• 1 white onion, chopped
• ½ cup creamy peanut butter (try using
moistened powdered peanut butter to
decrease calories)
• 1 lime, juiced
• ½ cup vegetable broth
• ¼ cup soy sauce
• ½ tablespoon cumin
• Brown rice
• Chopped scallions
• Crushed peanuts
• Cilantro
8. Directions
1. Place chicken in the base of crock pot. Top with red
pepper and onion.
2. In a bowl, mix together peanut butter, lime juice,
vegetable broth, soy sauce, and cumin. Pour sauce over
chicken.
3. Cook on low for 3-4 hours. Remove from slow cooker
and serve over brown rice.
4. Top with scallions, peanuts, and cilantro.

9. Peanut Butter Brownie Bites
Ingredients
For brownies:
• 1/2 cup whole wheat flour
• 1/2 cup protein powder
• 2/3 cup raw sugar
• 1/2 cup unsweetened cocoa powder
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 banana
• 1/2 cup olive oil
• 1 teaspoon pure vanilla extract
• 1/4 cup vegan dark chocolate chips
For peanut butter swirl:
• 1/4 cup creamy all-natural peanut butter (or PB powder)
• 1 tablespoon coconut oil
• 1 tablespoon maple syrup
• 1 teaspoon vanilla
10. Directions
1. Preheat oven to 350°F. Spray mini muffin tin with cooking spray.
2. In a large bowl, stir the dry ingredients together (flour, protein powder, sugar,
cocoa powder, baking powder, and salt), and set aside.
3. Mash the banana in a large bowl. Stir in the olive oil, one teaspoon vanilla, and
chocolate chips.
4. Add the dry ingredients to the wet, and mix well (it will be thick).
5. Use a spoon to fill each of the muffin wells just to the top.
6. In a small ceramic bowl, mix the peanut butter, coconut oil, maple syrup, and
vanilla. Pop the bowl in the microwave for 15 to 20 seconds, until slightly softened.
7. Add a dollop of the peanut butter mixture to the top of each brownie bite.
8. Bake for 15 minutes. Allow to cool for 10 minutes before moving to a cooling rack.
9. Enjoy! Store uneaten brownie bites in an airtight container.

Chocolate Shake
Ingredients
• 4 frozen bananas, cut in
thirds
• 2 heaping spoons all natural,
creamy peanut butter (or
almond butter for a more
mild taste)
• 2 tablespoons unsweetened
cocoa powder
• 1 1/2 cups vanilla almond milk
12. Directions
Combine all the ingredients into a blender and blend
until smooth. Add more almond milk to make the
shake less thick.
