Amino acids are the building blocks of proteins. There are 20 standard amino acids that make up proteins. Amino acids contain both amino and carboxyl groups and differ in their variable R groups. Two amino acids can be linked by a peptide bond to form dipeptides or polypeptides. Longer chains with more than 10 amino acids are called proteins. Proteins have four levels of structure: primary, secondary, tertiary, and quaternary. There are several methods to separate and analyze proteins including electrophoresis and chromatography.
