We have seen how dates can be used in a variety of savoury and sweet dishes – from soups,
main course, to desserts. Here are three interesting salad recipes in which dates, particularly
the best Medjool dates, make a deliciously sweet addition!
Date and Moroccan carrot salad
Put half a cup of pitted and chopped dates in a bowl, and pour two tablespoons of freshly
squeezed lemon juice and four tablespoons of freshly squeezed orange juice over them. Let the
dates and the juices soak for about 15 minutes, then drain the dates and retain the juice
mixture.
In another bowl, mix the dates with one pound of peeled and grated carrots. Stir in one finely
chopped garlic clove, half a teaspoon of ground cumin, one-fourth teaspoon of ground
cinnamon, one-fourth teaspoon ground sweet paprika, half a teaspoon of ground coriander and
half a teaspoon fine sea salt into the reserved juice mixture.
Next, slowly drizzle two tablespoons of extra-virgin olive oil into the spice-juice mixture, and
keep whisking the mixture constantly. Pour this dressing over the dates and carrots mix and stir
it well to coat evenly. Now stir in some freshly chopped mint and some chopped flat leaf
parsley. Allow this to stay for an hour at room temperature, then serve.
For an exceptional flavour, make sure you use only the best Medjool dates.
2. Date and spinach salad
Blend two whole pitted dates along with one teaspoon of finely grated lime zest, one-fourth
cup lime juice, and one-third cup vegetable oil in a blender until the mixture becomes smooth.
Season this with kosher salt and freshly ground pepper as per taste.
Heat one-third cup of vegetable oil in a medium-sized saucepan on medium-high heat and add
four large thinly sliced shallots, stirring often until they turn crisp and golden brown. Drain the
fried shallots on paper napkins and season with some salt. Toss in three-fourth cup chopped
and pitted dates and a bunch of trimmed flat leaf spinach with the dressing, and top with the
fried shallots.
Using the best Medjool dates will add a unique taste to this salad.
Date, carrot, and feta salad
Using a vegetable peeler, thinly slice three medium carrots into ribbons. Soak these in ice water
for about 15 minutes, until the carrot ribbons become firm and curl up, then drain and pat
them dry.
In a medium sized bowl, whisk together two tablespoons of fresh cilantro roughly chopped, one
and a half tablespoons of extra-virgin olive oil, two teaspoons of honey, juice of one lime, and
half a teaspoon of kosher salt. Next, add the carrot ribbons, one-fourth cup of crumbled feta
cheese, two tablespoons of pitted finely chopped dates, and two tablespoons of chopped
toasted almonds - toss until all the ingredients are evenly combined.
Use the best Medjool dates and let the salad marinate a bit before serving, this will add an
extra punch of flavour.
