2. Fermented Beverages
Fermentation is the action of yeast on sugar in a
solution which result in the breaking up of
sugar into carbon dioxide gas escapes in the
air while the alcohol remains in the original
liquid, eventually becoming a fermented
beverage.

4. A. Wines – wine is an alcoholic beverage
obtained from the fermentation of the juice
freshly gathered grapes, the fermentation of
which is carried out in the district of its origin
according to local tradition and practice.

6. Kinds of wines
1. Table wine
Generic wines – are those that are made to a
specific formula from a blend of grapes, so
that quality is consistent.
31. Beers – majority of beers are made with malted
barley, hops, water and yeast. Beer ranges
from less that 3 percent by volume to almost
30 percent

Spirits are made when alcohol is separated from
fermented liquid. “Proof” is the term used to
signify the alcohol content of spirits.
47. Mixed drinks – refer to a single servings of two
or more beverages types mixed together or of
one beverage type mixed with non alcoholic
mixer.

They contain a major alcoholic ingredient.
They contain one or more complementary

They contain one or more minor ingredients.
