Anniversary of Lima

proclaimed the Independence of Peru in the Plaza

Rosa de Lima
Peruvians have honored her on August 30 (the
day closest to her death) with demonstrations of
faith. Today Santa Rosa de Lima is considered
the patron saint of the National Police of Peru.

of Miracles
The main processions take place on 18, 19 and 28
October. Shows of faith include faithful going on
their knees or promising all kinds of penance in
exchange for a miracle. Gastronomic fairs are
crowded throughout the city

TYPICAL DISHES OF LIMA
Anticuchos are a popular meat dish, often
made with cow heart. This inexpensive
staple is at street-carts of the city.The
meat is usually marinated in vinegar and
spices (such as cumin, ají pepper, and
garlic).

on yellow potato paste seasoned with ground
chili, onion and celery, it can be stuffed with
tuna, avocado or chicken (we recommend
combining avocado and chicken).
The dish is served with some parsley, olives and
boiled eggs.

onion, tomato, chili, vinegar, soy sauce and

11. It is made with a filling of ground beef, onions, olives,
hard-boiled egg, cumin, and other spices.Papa rellena is
typically eaten with salsa criolla or aji sauce.

1 cup of all purpose flour
1 lb of ground beef
2 red onions
3 cloves of garlic
salt and white pepper
½ cup of raisins
2 hard- boiled eggs
1 TBSP of ají panca
6 peruvian olives

First, boil 2 pounds of potatoes around 20 minutes, peel them while hot, after mash the potatoes
and add salt and pepper, continue mixing and mashing the potatoes.
For do the fill, season the meat with salt, pepper and ají panca, mix together.
In a pan heat 2 or 3 tbsps of oil add chopped garlic, chopped onion mix them, add meat and
cook for a few minutes, when the meat is golden lower the heat and cover the pan, when it is all
cooked add the raisins, olives and chopped hard boiled eggs mix everything together.
Add flour to countertop and cover your hands with the flour, take some of the potatoes into the
palm of your hand with you other hand form an oval shape, place the filling on top add another
layer of potato on top close it carefully, turn it with your hands so that it’s uniform on all sides,
esa potato cover with flour.
Beat two eggs in a bowl, cover the papa rellena with the egg wash, add the papas to a pan with
oil, turn them to brown all sides, make sure they don't burn, remove them and place on a plate
with a paper towel.

Marinera Limeña
Marinera is a graceful and elegant dance that originated in
the coastal regions of Peru, including Lima. It is often
performed at festivals and special occasions, showcasing

woman and is accompanied by lively music played on
traditional instruments like the guitar and cajón.

Saya is an Afro-Peruvian dance that originated in
the coastal regions of Peru, including Lima. It is
characterized by energetic movements and rhythmic
beats, reflecting the African heritage of the Afro-
Peruvian community. Saya dancers often wear
colorful costumes and use drums and other
percussion instruments to create a lively atmosphere.

Cueca is a traditional dance that is popular
throughout South America, including Peru. The
Limeña variation of cueca incorporates unique
regional elements, making it distinct to Lima.
Dancers perform intricate handkerchief movements
and lively footwork, accompanied by lively music
played on guitars and other traditional instruments.
Festejo
Festejo is an Afro-Peruvian dance and musical genre
that has a strong presence in Lima. It features
energetic movements, powerful percussion, and lively
singing. Dancers often wear traditional Afro-Peruvian
clothing and use intricate footwork to express
themselves. Festejo is a celebration of African
heritage in Peru and an integral part of Lima 's
cultural landscape.
