A multi-faceted perfumer with diverse inspirations, Ralf Schwieger has worked for leading Houses and his
works includes the world famous Hermes Eau de Merveilles, Marc Jacob Men & Yves Saint Laurent Baby Doll.
Today he is proud to debut the first signature Cremieux fragrance. How did this story start?
The Preppy Mag has interviewed one of the fragrance world's most respected names to find out.
The Preppy Club: Born and raised in Germany,
you started studying fragrances at 30 after
training in Chemistry, this is rather late. How did
you discover your vocation for scents?
Ralf: Growing up, my best friend’s family had a
window-dressing business specialized in perfumery
stores. I became familiar with the brands and their
advertisement and last but not least accumulated a huge
stash of testers. Scents were an important expression of
myself and over time I became more and more
interested in the design and artistic aspects of fragrances
and the scientific curiosity,which drove me into the field
at first, fell behind…
TPC: When did you decide to move to the USA
and why?
R: I have always been attracted to big cities. Berlin was
the first big city I lived in and loved for all the possibili-
ties to meet people and indulge in cultural events. But I
was looking forward to live abroad and my career choice
brought me to Paris and finally to New York in 2000. I
would have loved to live in London but unfortunately
the opportunities for working in fragrance development
are limited there. Heavily influenced by Anglo-
American culture during my adolescence, I felt at home
in New York City right away and I still enjoy the cultural
and ethnical diversity here compared to more homog-
enous Germany.
TPC: Has living in New York City influenced your
fragrance creations? If so in what way.
R: I very much enjoy New York’s climate: hot, almost
tropical in summer and the assurance to experience a
snow storm in winter. The luminosity here is outstand-
ing. This sunny disposition has hopefully influenced my
creations but the American fascination with fresh and
clean scents certainly has.
TPC: What does Fashion and Beauty have in
common?
R: Wearing a scent is quite like wearing a second skin or
a garment.I think it is quite straightforward that fashion
has been heavily linked to fragrances for the last
hundred years.
TPC: When did the collaboration between you
and Stephane Cremieux start?
R: First exchanges about the project started two years
ago but most of the development work was done in
2014. It is important not to rush during fragrance
development and always good to pause and come back
to a scent a little later, just to see whether there is still
enough interest in the fragrance.
TPC: What's the inspiration behind Cremieux's
first fragrance and how did this fragrance
develop?
R: The preppy style was a huge inspiration. Cremieux is
a brand with a strong French heritage, so we had to find
a way to weave French elegance into American ease. To
start, we developed several accords to illustrate the
texture of fabric used for the iconic Cremieux style - the
one we focused on was a ’felt accord’, a creamy woody
note, which interprets the easy-to-like and easy-to-wear
style of the Cremieux apparel.
TPC: If you could describe this fragrance in few
words...
R: The scent is warm with a fresh introduction through
bergamot and pear - an oriental woody note with French
lavender and iris oils built into a comfortable woody
base.

Frederic Vaucamps is the man who turned a local pastry of Northern France into a dessert phenomenon. Fred's version of the traditional
"Merveilleux" is a suite of surprisingly light meringues, coated with aerial whipped cream and covered in chocolate flakes. In Paris, Fred's
6 elegant stores have turned around the traditional dessert scene and demonstrated how the most demanding palates can been
seduced by the magic of his pastries. Today, clients patiently line up on the sidewalk of Fred's stores in Geneva, Paris, London and
Brussels for a chance to taste his delicious specialties. This year, New Yorkers too have fallen in love with these unique creations in the
heart of the West Village.... It's time for a sweet break, let's meet Fred!
The Preppy Club: You're from the North of France,
could you tell us a bit about the lifestyle there?
Frederic: To single out one trait of our lifestyle, we are
a warm-hearted and festive population. We are known
for our tempestuous weather and, probably as a
response to it, for our generous and facetious character.
These is always an opportunity to celebrate in the North.
Carnavals are a big thing here; and so are birthdays,
weddings and friends gathering. And of course, at the
end, there is always a cake for everybody to share.
TPC: How did the story start with The Merveilleux?
F: Well it started in my production lab 30 years ago in a
small city of Northern France.At the time I was running
the regular type of bakery that you can find in all French
cities and villages. I became interested in the Merveil-
leux, a traditional pastry of our region that was part of
my assortment. I experimented for years and eventually
came up with a new recipe. Beside suiting my taste, it
had the great benefit of requiring less early preparation
after my frequent nights out with my friends. My
Merveilleux became popular in town and then gradually
drew people from neighboring towns and beyond; to the
point where I was selling much more Merveilleux than
any other pastries. I decided to close this store and open
my first store in the capital city of Northern France,
Lille, and I simply named it "Aux Merveilleux de Fred".
Today each of our 17 stores replicates on-site and
by-hand the process and recipe of the original store in
Lille.This is the heart of our identity.
TPC: Describe in a few words a perfect meringue?
F: A meringue must taste caramel, be aerial and eaten
right out of the oven.
TPC: Is pastry a matter of style, too?
F: I feel that, when I started as a Chef, style and pastry
did not have much to do together. But today, they
obviously have evolved to combine and reinforce each
other very well. It is a field that I have come to
constantly research for the decor and materials of our
stores, the design of our packaging, and the atmosphere
we create for clients.
TPC: What would be a typical day in the life of
Fred Vaucamps?
F: With the development of my brand, I don’t really
have a typical day anymore. However routine remains in
2 daily milestones: I wake up very early in order to have
time for myself and for a quiet coffee, and I stop at 6pm
for a beer with whoever is with me at that time.
TPC: Are you adept of the motto "Less is more"?
F: My philosophy is more driven by balance than by
minimalism. However, I think that a good pastry should
be sized minimally to leave its taster asking for more.
In regards to Fashion...
TPC: Describe your favorite outfit...
F: I usually wear chino pants and a shirt. I love quality
shirts. I am a collector!
TPC: In your opinion, the best color for a suit is...
F: Black is the universal reference for a suit but my
favourite is Marine Blue.
TPC: What’s your business meeting attire?
F: See my favourite outfit above and a pastry chef
jacket by Bragard.
TPC: If you had one mandatory fashion acces-
sory to pick...?
F: The only mandatory accessory to me are my glasses!

The Preppy Club: 130 shops in over 20 different
countries, why did you choose NY are your new
challenge?
Eric: New-York is such an amazing place, with a great
energy, which is motivating. But New-Yorkers are
experts in food, so it’s a big challenge to be accepted by
them. Now, we can see everyday how they like the
quality of our product.
TPC: Paris, NY - same love for real/good bread?
E: Exactly! I am so proud when I see people in NY in the
afternoon having a piece of baguette such as people in
France do. New-Yorkers are fond in food and they
understand very well the features of the bread, such as
fermentation, or caramelization.
TPC: Tell us about the french "Art de vivre"...?
E: We like to have friends in our home for diner, with
good food prepared with fresh ingredients, good wine
and of course good bread. It matters to prepare
something for our friends/ family.
TPC: What would be your idea of the perfect
brunch?
E: Eggs, bread, fruits, grains, milk and a lot of viennoi-
series! According to me, croissants are what you see first
when you brunch.
TPC: What's your favorite type of pastry during
Christmas?
E: Bûche au café! Each year,we have it in our bakeries in
Paris because it’s my favorite!
TPC : In your experience, what’s the key ingredi-
ent to success?
E: People who work with you, locations and quality of
ingredients.
TPC: Along the same thought, what’s your recipe
for happiness?
E: Savouring the everyday, seeing the good and beauti-
ful things in our job but also in paintings, in people.
In Regards to Fashion...
TPC: Your favorite city for shopping?
E: Paris, New York, and Milan are my three favorites.
TPC: What does 'preppy' refers to in your mind?
E: Classy with a nice three-piece-suit and a hat.
TPC: Is your favorite look casual, classy, hipster?
E: I am more classy!
TPC: What's your favorite winter clothing?
E: A suit with a warm coat.
TPC: In your eyes how do Cremieux & Maison
Kayser relate to each other?
E: I think we have common values such as quality,
respect of artisans who work for us and for our teams
who sell our products everyday.

S: All three are beautiful but I would have to say Paris.

S: Willismsburg, Brooklyn.

F R INTERVIEW with R A L F S C H W I E G E R A multi-faceted perfumer with diverse inspirations, Ralf Schwieger has worked for leading Houses and his works includes the world famous Hermes Eau de Merveilles, Marc Jacob Men & Yves Saint Laurent Baby Doll. Today he is proud to debut the first signature Cremieux fragrance. How did this story start? The Preppy Mag has interviewed one of the fragrance world's most respected names to find out. The Preppy Club: Born and raised in Germany, you started studying fragrances at 30 after training in Chemistry, this is rather late. How did you discover your vocation for scents? Ralf: Growing up, my best friend’s family had a window-dressing business specialized in perfumery stores. I became familiar with the brands and their advertisement and last but not least accumulated a huge stash of testers. Scents were an important expression of myself and over time I became more and more interested in the design and artistic aspects of fragrances and the scientific curiosity,which drove me into the field at first, fell behind… TPC: When did you decide to move to the USA and why? R: I have always been attracted to big cities. Berlin was the first big city I lived in and loved for all the possibili- ties to meet people and indulge in cultural events. But I was looking forward to live abroad and my career choice brought me to Paris and finally to New York in 2000. I would have loved to live in London but unfortunately the opportunities for working in fragrance development are limited there. Heavily influenced by Anglo- American culture during my adolescence, I felt at home in New York City right away and I still enjoy the cultural and ethnical diversity here compared to more homog- enous Germany. TPC: Has living in New York City influenced your fragrance creations? If so in what way. R: I very much enjoy New York’s climate: hot, almost tropical in summer and the assurance to experience a snow storm in winter. The luminosity here is outstand- ing. This sunny disposition has hopefully influenced my creations but the American fascination with fresh and clean scents certainly has. TPC: What does Fashion and Beauty have in common? R: Wearing a scent is quite like wearing a second skin or a garment.I think it is quite straightforward that fashion has been heavily linked to fragrances for the last hundred years. TPC: When did the collaboration between you and Stephane Cremieux start? R: First exchanges about the project started two years ago but most of the development work was done in 2014. It is important not to rush during fragrance development and always good to pause and come back to a scent a little later, just to see whether there is still enough interest in the fragrance. TPC: What's the inspiration behind Cremieux's first fragrance and how did this fragrance develop? R: The preppy style was a huge inspiration. Cremieux is a brand with a strong French heritage, so we had to find a way to weave French elegance into American ease. To start, we developed several accords to illustrate the texture of fabric used for the iconic Cremieux style - the one we focused on was a ’felt accord’, a creamy woody note, which interprets the easy-to-like and easy-to-wear style of the Cremieux apparel. TPC: If you could describe this fragrance in few words... R: The scent is warm with a fresh introduction through bergamot and pear - an oriental woody note with French lavender and iris oils built into a comfortable woody base. CREMIEUX.FRCREMIEUX.FR
  • 7. 1312 C R E M I E U X . F R INTERVIEW with F R E D E R I C VAU C A M P S Frederic Vaucamps is the man who turned a local pastry of Northern France into a dessert phenomenon. Fred's version of the traditional "Merveilleux" is a suite of surprisingly light meringues, coated with aerial whipped cream and covered in chocolate flakes. In Paris, Fred's 6 elegant stores have turned around the traditional dessert scene and demonstrated how the most demanding palates can been seduced by the magic of his pastries. Today, clients patiently line up on the sidewalk of Fred's stores in Geneva, Paris, London and Brussels for a chance to taste his delicious specialties. This year, New Yorkers too have fallen in love with these unique creations in the heart of the West Village.... It's time for a sweet break, let's meet Fred! The Preppy Club: You're from the North of France, could you tell us a bit about the lifestyle there? Frederic: To single out one trait of our lifestyle, we are a warm-hearted and festive population. We are known for our tempestuous weather and, probably as a response to it, for our generous and facetious character. These is always an opportunity to celebrate in the North. Carnavals are a big thing here; and so are birthdays, weddings and friends gathering. And of course, at the end, there is always a cake for everybody to share. TPC: How did the story start with The Merveilleux? F: Well it started in my production lab 30 years ago in a small city of Northern France.At the time I was running the regular type of bakery that you can find in all French cities and villages. I became interested in the Merveil- leux, a traditional pastry of our region that was part of my assortment. I experimented for years and eventually came up with a new recipe. Beside suiting my taste, it had the great benefit of requiring less early preparation after my frequent nights out with my friends. My Merveilleux became popular in town and then gradually drew people from neighboring towns and beyond; to the point where I was selling much more Merveilleux than any other pastries. I decided to close this store and open my first store in the capital city of Northern France, Lille, and I simply named it "Aux Merveilleux de Fred". Today each of our 17 stores replicates on-site and by-hand the process and recipe of the original store in Lille.This is the heart of our identity. TPC: Describe in a few words a perfect meringue? F: A meringue must taste caramel, be aerial and eaten right out of the oven. TPC: Is pastry a matter of style, too? F: I feel that, when I started as a Chef, style and pastry did not have much to do together. But today, they obviously have evolved to combine and reinforce each other very well. It is a field that I have come to constantly research for the decor and materials of our stores, the design of our packaging, and the atmosphere we create for clients. TPC: What would be a typical day in the life of Fred Vaucamps? F: With the development of my brand, I don’t really have a typical day anymore. However routine remains in 2 daily milestones: I wake up very early in order to have time for myself and for a quiet coffee, and I stop at 6pm for a beer with whoever is with me at that time. TPC: Are you adept of the motto "Less is more"? F: My philosophy is more driven by balance than by minimalism. However, I think that a good pastry should be sized minimally to leave its taster asking for more. In regards to Fashion... TPC: Describe your favorite outfit... F: I usually wear chino pants and a shirt. I love quality shirts. I am a collector! TPC: In your opinion, the best color for a suit is... F: Black is the universal reference for a suit but my favourite is Marine Blue. TPC: What’s your business meeting attire? F: See my favourite outfit above and a pastry chef jacket by Bragard. TPC: If you had one mandatory fashion acces- sory to pick...? F: The only mandatory accessory to me are my glasses! C R E M I E U X . Today, Maison Kayser has over 8 locations in the city, and more to come... The Preppy Club: 130 shops in over 20 different countries, why did you choose NY are your new challenge? Eric: New-York is such an amazing place, with a great energy, which is motivating. But New-Yorkers are experts in food, so it’s a big challenge to be accepted by them. Now, we can see everyday how they like the quality of our product. TPC: Paris, NY - same love for real/good bread? E: Exactly! I am so proud when I see people in NY in the afternoon having a piece of baguette such as people in France do. New-Yorkers are fond in food and they understand very well the features of the bread, such as fermentation, or caramelization. TPC: Tell us about the french "Art de vivre"...? E: We like to have friends in our home for diner, with good food prepared with fresh ingredients, good wine and of course good bread. It matters to prepare something for our friends/ family. TPC: What would be your idea of the perfect brunch? E: Eggs, bread, fruits, grains, milk and a lot of viennoi- series! According to me, croissants are what you see first when you brunch. TPC: What's your favorite type of pastry during Christmas? E: Bûche au café! Each year,we have it in our bakeries in Paris because it’s my favorite! TPC : In your experience, what’s the key ingredi- ent to success? E: People who work with you, locations and quality of ingredients. TPC: Along the same thought, what’s your recipe for happiness? E: Savouring the everyday, seeing the good and beauti- ful things in our job but also in paintings, in people. In Regards to Fashion... TPC: Your favorite city for shopping? E: Paris, New York, and Milan are my three favorites. TPC: What does 'preppy' refers to in your mind? E: Classy with a nice three-piece-suit and a hat. TPC: Is your favorite look casual, classy, hipster? E: I am more classy! TPC: What's your favorite winter clothing? E: A suit with a warm coat. TPC: In your eyes how do Cremieux & Maison Kayser relate to each other?
