The document summarizes the creation of Le Guishu, the first French yellow wine. Olivier Sublett, who has been in the wine export business for over 30 years, created Le Guishu after frequent visits to China and meeting his Chinese wife Guizhi. Le Guishu pays tribute to both his love for Guizhi and her homeland. It describes the three varieties of Le Guishu - Sec, Semi Dry, and Semi-Sweet - and their tasting notes. It also provides information on the labels and contact information for the company that produces Le Guishu.

The Sublett family has been making wine in the Saint-Emilion area of
Bordeaux since 1822, where it owns several wineyards.
Olivier Sublett, Creator of LE GUISHU: The 1st
fermented rice wine
(Yellow wine) from FRANCE
Olivier Sublett has been wine exporter and globe trotter for over 30 years. in the last
decade, he visited China very frequently, where he met his current wife.
From the meeting of a French and a Chinese woman was born the desire to create the
"FAGUO YELLOW WINE" ( 法国黄酒 ), which means "FRENCH YELLOW WINE”.
In imparting the "French touch", the oldest alcoholic beverage of mankind has been
recreated with innovative and delicious flavors. The FAGUO YELLOW WINE has
12.5% alcohol content, such as with wine grapes.

GuiZhi & Olivier

The GUISHU - Sec
Nose: (Bouquet) powerful, vinous with
a little lemony apple opening, but very
quickly the floral scents such as rose
and lychee dominate.
Palate: Pleasant, ethereal, fresh, with a
little citrus, with the rose lingering in the
mouth. A fine and delicate body, a bit
sexy. The final reminiscent of fermented
rice with a hint of bitterness.
Food and wine: Accompany dishes
with little or no spiciness.
Seafood, crab and smoked salmon are
indicated.
Perfect with sushi, it goes very well with
dishes with ginger. Slightly spicy,
Cantonese food such as dim sum are
very suitable, grilled or steamed fish,
white meat, an accompaniment of raw or
cooked vegetables.
But also vegetable appetizers, meats
and salads.
NB: The 3 "Faguo Yellow Wines" are
the ones that are closest to traditional
white wines, but the rose-lychee gives it
an oriental mark. If one were to compare
it, you could approach a Riesling-
Chardonnay with a hint of muscat, this
with a rather elegant structure. But it
would be more like wines of California,
New Zealand and even some countries
of Eastern Europe.

The GUISHU - Semi Dry
Color: yellow gold Nose: Discreet but
clear and pure, hard as a Canadian Ice
Wine. You can smell the aromas of pear
and lychee with a hint of fermented rice
according to temperature. Palate: The
initial impression is charming, very
round in style, and fruity. When you
combine the semi-dry finish, it continues
to swell in a nice cool sweetness. On the
final, we again find notes of pear.
Food and wine:
Champion of sweet and sour dishes and
mildly spicy dishes.
Chinese cuisine finds its place as well
as all the exoticism with multiple flavors
of the different continents.
In traditional meals, mussels in cream,
shrimp cocktail, fish sauce ... or as an
accompaniment of hot meats such as
sweet and sour pork with pineapple,
white meat such as poultry, pigeon with
pear .. . also perfect with a salad with
walnuts, apples and sheep milk cheese
such as pecorino.
Also to accompany savory buckwheat
pancakes, it is an excellent alternative to
cider.
Original: Paired with cheeses such as
blue cheese and other more unusual
types of soft cheeses such as
Reblochon.

The GUISHU – Semi-sweet
Color: Amber-yellow Nose: it is powerful
and very complex and the aromatic
expression is diverse. Among others, a variety
of fresh fruits, candied and dried. Among the
features is orange peel, coconut, an appealing
impression of honey and a subtle hint of
caramel.
Taste: Although complex, it is rich and well-
structured. The freshness and sweetness are
beautifully balanced. Powerful, it gives
smoothness without heaviness. Furthermore,
the finish remains surprisingly fresh and
encourages repeated pleasant tasting. Food
pairing: Aperitif but also digestive at the end
of a meal. Very good accompaniment when
snacking on dried fruit. During the meal, I
recommend rather strong dishes with meat
sauce, for example pork with potatoes
caramel, or duck with honey. This is a
champion of exotic food, spicy food, Chinese,
Indian, Thai ... with nuts, dried fruit, and
dishes with coconut and pineapple.
Note: It is not a dessert wine. Of the three,
this is the one that comes closest to the
traditional Yellow Wine of China. In addition to
its color and its power, one finds notes of the
Osmanthus flower. Eclectic, connoisseurs will
appreciate its beautiful balance and variety in
its subtle complexity. Young people will also
enjoy this for festive celebrations.
