“The final and most challenging stage was the
cleaning/sanitation test. To pass this test,
mixer ran at full capacity for nine consecu-
tive batches. Once the mixer was completely
clean, they took a swab test on every prod-
uct contact surface inside the bowl. This
swab was then tested in the parts-per-billion
range for anything that was left behind from
cleaning. Just to add a visual comparison to
parts- per- billion, this is roughly equivalent
to one drop of ink in a canal lock full of wa-
ter. The mixer passed this test on the first
attempt. This was a huge accomplishment.”
