Pineapple Fried Rice<br />yield 4 cups<br />ingredients:<br />3 c day old rice (white or brown)<br />¼ c pineapple (diced)<br />4 T red pepper (julienned)<br />4 T red onion (julienned)<br />1 T fresh ginger (minced or grated)<br />1 T garlic (minced)<br />2 t curry powder<br />1 t sesame oil<br />1T+1t peanut oil<br />½ c pineapple (chopped)<br />½ c. basil (whole leaves)<br />2 eggs (lightly beaten)<br />3 T tamari soy<br />-in a large nonstick sauté pan heat sesame and 1 t peanut oil over medium heat<br />-add garlic and ginger and fry until it begins to turn golden<br />-add eggs and scramble<br />-set aside in a bowl<br />-reheat pan over medium high heat with 1T fresh peanut oil and add onion, red pepper and pineapple<br />-toss and fry until vegetables begin to caramelize<br />-add curry powder and rice and fry stirring often until it begins to color<br />-add tamari soy and sautéed vegetables with egg and toss<br />-add basil, toss together and serve<br />
