4. Method
●
Preheat the oven to 180°C/350°F/Gas mark 4,
10 minutes before baking. Lightly oil and line a
20.5cm/8inch square cake tin with greaseproof
or baking paper

● Combine the butter, sugar and chocolate in a
small saucepan and heat gently until the sugar
and chocolate have melted, stirring constantly.
Reserve and cool slightly.
6. Method
● Mix together the peanut butter, eggs and
peanuts in a large bowl. Stir in the cooled
chocolate mixture. Sift in the flour and fold
together with a metal spoon or rubber spatula
until combined. Pour into the prepared tin and
bake in the preheated oven for about 30
minutes until just firm. Cool for 5 minutes in the
tin before turning out onto a wire rack to cool.
7. Method
● To make the topping, melt the chocolate in a
heat proof bowl over a saucepan of simmering
water, making sure that the base of the bowl
does not touch the water. Cool slightly, then stir
in the sour cream until smooth and glossy.
Spread over the brownies, refrigerate until set,
then cut into squares. Serve the brownies cold
