This document discusses value addition opportunities for cassava in sub-Saharan Africa. It notes that most agricultural produce is sold raw, leading to lower farmer returns and waste. However, value can be added through developing new higher-value cassava products. This involves processing cassava into items like garri, fufu, tapioca, chips, flour, livestock feed, ethanol and starch. Vitamin A biofortified cassava was also released in 2011 in Nigeria to address vitamin A deficiencies and can be processed into foods like garri and fufu.
