Reference
Our company combines tradition, the hospitality of the Münsterland and novelties. The hotel,
classified as a 4-star hotel, has 20 rooms with 38 beds. The restaurant, awarded a Michelin star in
1993 which we have kept ever since, the Vinothek and our "Old Forge" offer a culinary product range
of down-to-earth haute cuisine up to fine regional dishes. Auspicious occasions or modern seminars -
all that is possible in our garden pavilion for up to 170 guests.
Mr. Frederik Dirksen, born on 30 January 1991, resident of Hexenweg 16 at 59510 Lippetal,
underwent professional training as a cook in our company frorn 01-08-2007 to 2l-06-2010. His period
of training ended after he had passed his final apprenticeship examination. He passed his practical
examination before the IHK Koblenz with the grade Excellent; in addition he mastered the
supplementary qualification for Jeunes Restaurateurs with flying colours.
Mr. Dirksen was trained in all posts in our kitchen that he was able to manage self-responsibly in his
third year of training as a substitute of his fully trained colleagues. It goes without saying that he was
able to set up an extremely clean mise en place, his preparations were exact and his way of working
was clean. Economical processing of the basic products and permanent food controls were always in
the focus of his attention. He cornpleted all his tasks in a target-oriented way, quickly and to our
utmost satisfaction.
During the22 years of my work as an instructor,I only saw very few apprentices like him that earn
my respect due to their great talent and discreet ambition.
During his training, Frederik attended the elite class of Jeunes Restaurateurs d'Europe at the
Gastronomische Bildungszentrum Koblenz e.V. This course is open only to especially talented and
promotion-worthy young people. Frederik Dirksen confirmed this confidence in him during his entire
period of training.
During his apprenticeship, Mr. Dirksen proved to be a particularly dedicated staff member. He
combined his professional skills and good manners with human qualities such as collegiality and the
willingness to help. He was always willing to take unexpected extra work.
Frederik Dirksen leaves our company after completion of his final examination before the IHK
Koblenzto gather additional experience in his profession. We wish him allthe best for his private life
and career and thank hirn very much for his work.
We would be pleased to recommend him to any of our colleagues and we would be very happy to get
him back as a staff member sometime in the future.
