Since the beginning, the MIDDLE has been identified as the biggest barrier. There are those that want to sell it, but donโt have avenues to reach those that want it.
And really we still have the Consumers driving demand.
And while we have made Great progress, there still seems to be this square peg in a round hole problem.
While distributors are finding ways to make local work in their world. There are some things that go against the grain.
Distribution was built on premise of economies of scale, where it is efficient to carry less variety, make larger drops and to be as predictable as possible.
Variety, unpredictability, and small volumes do not mix well in this equation BUT that doesnโt mean it cannot be done.
You see Local Food provides some great benefits in variety/quality of products produced.
Specifically, Food hubs can play a role in helping small farmers access larger markets.
And at the same time, helps the market access more diverse and regionally specific products.
