3. The scenario:
In the last 20 year’s traditional food retail has experienced increased
marginal cuts in the sector; these cuts generally only benefit the
largest retailers and discounters.
However, in the last few years, thanks to new trends and parameters
of freshness, traditional food retail has been a warrantee for the
consumer, safeguarding local food production and ensuring a more
beneficial and direct relationship with the consumer.
The Fresh Market business model is ethical, fair, transparent and
sustainable

Wholesale and retail markets are a credible answer to many of the problems currently evident in food production and consumption today. If there is to be real forward progress in ensuring healthy, sustainable food - alongside regional, urban, economic and social development, it is a major (if not urgent) priority, that local and regional decision-makers understand, address and support the needs of these fresh food markets and their wholesale and retail traders.
Fresh food markets offer consumers real quality/price competitiveness for products; they also are a positive contribution to food security, food safety and hygiene; they play an important role in public health, food access and social cohesion; offer substantial employment in cities; and play a significant role in environmental protection.
